WALNUT VINAIGRETTE

Walnut Vinaigrette image

Steps:

  • Place all of the ingredients, except the oils, in a blender and process on high speed. With the machine running, gradually add the olive and walnut oils until the vinaigrette is emulsified, about 1 minute. Refrigerate until ready to serve. (The vinaigrette can be prepared up to 1 week in advance, covered and refrigerated.)
  • Note: To toast walnuts, place the walnuts in a single layer on a baking sheet. Bake in a preheated 350 degrees F. oven, stirring occasionally, until toasted, 8 to 12 minutes. Cool completely.

1 cup (4 ounces) walnuts, lightly toasted (see Note)
1 cup water
1/2 cup sherry vinegar
2 tablespoons minced shallots
2 teaspoons fine sea salt
1/4 teaspoon freshly ground black pepper
1/2 cup olive oil
1/2 cup imported walnut oil

Parsley and Walnut-Crusted Salmon image

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Drizzle 1 tablespoon oil in a 9x13-inch baking dish. Arrange salmon in the dish.
  • Process parsley, lemon juice, garlic, salt, pepper, and remaining 2 tablespoons oil in a food processor until evenly chopped. Add 1/3 cup walnut pieces; process until combined and walnuts are still a bit chunky. Spread onto salmon.
  • Bake in the preheated oven until salmon flakes easily with a fork, 20 to 25 minutes. Garnish with chopped walnuts and serve with lemon wedges.

Salmon With Quick Parsley Walnut Pesto Recipe by Tasty image

Steps:

  • Mix together parsley, walnuts, garlic, 3 tbsp lemon juice, olive oil, and pepper. Stir until fully incorporated. Set aside.
  • Mix together pepper, salt, and cayenne pepper. Rub filet of salmon with seasonings.
  • In a large skillet, heat 2 tablespoons of olive oil. Place salmon skin side down. Cook for 5 minutes. Flip salmon, then cook for another 5 minutes
  • Pour ¼ cup (60 ml) lemon juice over salmon. Cook for 3 more minutes until lemon juice has reduced. Remove salmon from heat.
  • Spread the parsley walnut mixture over salmon. Serve immediately.
  • Enjoy!
