- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x5-inch loaf pan.
- Whisk pumpkin, brown sugar, white sugar, canola oil, and eggs together in a bowl until smooth. Sift flour, cinnamon, nutmeg, baking soda, baking powder, salt, allspice, and cloves together in a separate bowl. Stir flour mixture, a little at a time, into pumpkin mixture until batter is smooth; fold in quinoa, walnuts, and cranberries. Pour batter into prepared loaf pan.
- Bake in the preheated oven until top of loaf springs back when lightly touched, 50 to 60 minutes.

QUINOA BROWN BREAD
A new twist on the classic Irish brown soda bread. Quinoa adds a fantastic nuttiness and texture to this easy-to-make, dense bread! Spread with butter and top with honey or blackcurrant jam for a tasty and healthy treat.

- Preheat oven to 400 degrees F.
- Grease and flour a standard loaf pan.
- Place oats in a food processor and blend to about the same size as the quinoa seeds (not necessary, but I think it makes for a better texture).
- Combine all ingredients except the buttermilk in a large bowl, making sure to break up any clumps of quinoa with your fingers.
- Add half the buttermilk to the dry ingredients, then slowly add the rest until a sticky but firm dough is formed (you may not need to use all of the buttermilk).
- Place the dough in the prepared loaf pan and spread it out evenly.
- Bake around 40 minutes, until a toothpick inserted into the center comes out clean. If the top starts to get too dark, tent it with aluminum foil while it finishes baking.

- Whisk honey into warm water and add yeast. Let stand for 5 - 8 minutes until yeast has bloomed and is puffy.
- Meanwhile, whisk together dry ingredients and add to the bowl of a stand mixer. In a small bowl, beat together eggs and oil.

- In a high-speed blender or food processor, grind quinoa for a few minutes until flour forms. Transfer to a large mixing bowl along with oat flour, baking soda, baking powder and salt; stir very well. Add butter or coconut oil and stir until it is incorporated with dry ingredients in small pieces.
- In a medium bowl, whisk milk, maple syrup and vinegar. Pour into a bowl with dry ingredients and mix well with spatula.
- Transfer to a prepared loaf tin, level and sprinkle with sesame seeds if desired. Bake for 60 minutes loosely covered with parchment paper for the first 30 minutes to prevent top from burning. Remove from the oven and let cool for about an hour. Then loosen the sides with a knife, flip the tin and give a few gentle pats on a bottom. Bread should slide out and cool off completely before slicing.
