Moist and spicy bar cookies with frosting. An easy and quick after school snack. Also goes great at carry-ins and bake sales. You can also just sprinkle with confectioners sugar instead of frosting.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
- In a medium bowl, mix together the butter, brown sugar and egg until smooth. Stir in applesauce. Combine the flour, baking soda, salt and pumpkin pie spice; stir into the applesauce mixture until well blended. Spread evenly into the prepared pan.
- Bake for 25 minutes in the preheated oven, or until edges are golden. Cool in the pan over a wire rack.
- In a small bowl, mix together the confectioners' sugar and margarine. Stir in vanilla and milk until smooth. Spread over cooled bars before cutting into squares.

CARAMEL APPLESAUCE BARS
Tastes a lot like the caramel apple bread I make in the Fall...without the trip to the orchard! Because these bars use applesauce, they're a snap to whip up any time of year! Moist and delicious with a caramel-y glaze.

Steps:
- 1. Grease a 9x13 pan. Preheat oven to 350F.
- 2. Combine flours, baking powder, baking soda, salt and cinnamon.
- 3. In a med. saucepan, melt the butter. Add the sugar and honey and whisk until smooth. Remove from heat. Whisk in the eggs, one at at time until well combined. Add the applesauce and vanilla and stir well.
- 4. Dump the dry ingredients into the pan with the wet and stir gently to combine. Spread batter in pan and bake for 20-25 min. until cake is starting to pull away from sides of pan, and toothpick tests done. Remove to rack to cool.
- 5. Make the glaze: Melt the butter, then add the remaining ingrdients. Heat and whisk until mixture comes to a boil. Reduce heat to a simmer and cook, stirring often for 5 minutes. Pour hot glaze over bars, spreading evenly with a metal spatula. Allow bars to finish cooling, then cut into squares.

FROSTED APPLE SAUCE RAISIN BARS - STEPH
These delightful bars were served at our church coffee bistro last weekend and were enjoyed by everyone. I had to have the recipe.

- 1. In a mixing bowl equipped with a paddle, mix softened butter on medium speed until creamy and light. Add brown sugar and beat until well blended. Add eggs, one at a time, beating on medium until smooth. Stir in apple sauce. In a separate bowl, mix flour, baking soda, spices and salt. Add flour mixture to butter mixture and combine just until smooth. Plump raisins in hot water for about 10 minutes. Stir in raisins.
- 2. Pour batter into greased half size sheetpan. Bake at 350 degrees for 20 - 25 minutes or until a toothpick inserted in center comes out clean. Remove from oven and cool on wire racks.
- 3. Icing: 1/4 c. butter, 1 qt. powdered sugar, 1/4 c. milk, 1 tsp. vanilla. In a saucepan, heat butter until lightly browned. Remove from heat and whisk in powdered sugar and beat until smooth, adding milk as needed to produce a spreadable consistency. Stir in vanilla. Spread the icing evenly over the cooled cake and cut into 24 bars. ENJOY!
RAISIN APPLESAUCE CAKE
This cake is one of my grandfather's favorites. And it seems like he always knows when you're making it-he must have a keen sense of smell! The recipe was passed down through the generations beginning with my great-grandmother. Sometimes I can imagine her making it all those years ago.

- In a bowl, cream the sugar and shortening. Beat in molasses until blended; set aside. Sift together flour, baking soda, cinnamon, cloves and salt; add to creamed mixture alternately with applesauce, beating well after each addition. - In a large bowl, cream butter, shortening and brown sugar until light and fluffy, 5-7 minutes. Add flour, oats, salt and baking soda; mix well. If desired, stir in pecans. Set aside 2 cups. - Cake:.
- Set oven to 350 to preheat.
- Grease and flour a 9 x 13 pan.
- Sift together flour, cocoa, salt, cinnamon, cloves, nutmeg, allspice, baking soda and baking powder.
- Add fruit and nuts and toss to coat.
- In large bowl cream shortening and sugar for 2 minutes, then add eggs, one at a time while beating 2 minutes.
- Add flour mixture alternately with applesauce while beating.
- Scrape bowl as necessary, beat only until blended.
- Turn into pan and bake for 50 minutes or until done.
- Cool and frost with Caramel Frosting.
- Frosting:.
- Melt butter in saucepan, stir in brown sugar.
- Cook and stir over low heat for 2 minutes.
- Add milk, continue stirring until boiling.
- Remove from heat.
- Cool to lukewarm and pour into small bowl.
- Add sugar and vanilla while beating.
- Beat about 2 minutes until spreading consistency.
- Adjust consistency with a few drops of hot water or more sugar as needed.
- Spread at once on cake.
