- Position the racks in the top and lower thirds of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment. Whisk together the flour, baking soda, cinnamon, salt and allspice in a large bowl.
- Beat the butter, brown sugar and granulated sugar with an electric mixer on medium-high speed in a large bowl until light and fluffy, scraping down the sides of the bowl occasionally. Beat in the eggs 1 at time until blended, then beat in the vanilla.
- Reduce the speed to low and beat in the flour mixture in 3 additions until smooth. Stir in the oats, raisins and walnuts with a rubber spatula. Drop heaping tablespoons of the dough onto the prepared sheets about 2 inches apart.
- Bake the cookies, rotating the pans halfway through, until golden brown but still soft in the center, about 15 minutes. Let the cookies cool slightly on the baking sheets, then transfer to wire racks to cool completely. Store in an airtight container at room temperature for up to 3 days.

For a cakey cookie, let the dough rest in the refrigerator for at least 3 hours (or overnight works even better) to allow the oatmeal to hydrate. Then bake for a puffy cookie. We used dark brown sugar for added flavor and moisture but our secret ingredient is honey. When baked right away, the honey causes the cookie to spread, keeping it soft and moist. When you let the dough rest, the oatmeal and flour absorb the honey for that classic cakey texture.

- Arrange an oven rack in the center of the oven and preheat to 350 degrees F. Line a rimmed baking sheet with parchment paper.
- Whisk together the flour, salt, baking soda and cinnamon in a small bowl until combined. - 1. Preheat oven to 375 degree F. In a bowl, mix together the cake mix, oats, flour and cinnamon. Set aside. Measure our 1 cup of raisins and pour hot water over them and let set while mixing batter. Drain well.
- 2. In another bowl, whisk together the eggs, brown sugar and pour into the cake mixture. Pour in the melted butter and stir until thoroughly blended. Stir in the raisins and nuts.
- 3. Spray baking sheet with bakers joy or grease and drop batter by tablespoonfuls on prepared sheet, about 2 inches apart. Bake for 12 - 15 minutes or until golden on the bottom. I always take mine out before too dark. Finish cooling on racks.Enjoy!
