Ravai Uppamma (Semolina Upama) image

Steps:

  • Chopped mixed vegetables and cook until just tender.
  • Roast Rava or Sooji (cream of wheat) in a non-stick pan till golden brown. KEEP IT SEPERATE.
  • Put the required oil in the pan and add mustard seeds and black Gram Dal or Dhuli Urad.
  • When it starts fluttering, add chopped onions, green chilies, curry leaves and finely cut ginger
  • When onion turns brown add the roasted Rava or Sooji and sauté nicely.
  • Add salt and cooked vegetable and sauté lightly.
  • Over a medium flame add about 4 cups of luke warm water and mix well.
  • To avoid lumps stir continuously, till the Uppamma.
  • Serve hot with cocunut chutney.
  • If desired add roasted cashews before serving.

  • When the mustard seeds splutter, add green chili, onions and ginger. Saute for 2 minutes while stirring frequently.
  • Add carrots, peas, salt, sugar and cashews. Stir well. If you are adding different veggies that take longer to cook, then saute them for a few minutes.
  • Add roasted rava and water. Stir it all up and scrape if anything is stuck to the bottom. Close lid with vent in sealing position.

  • Add fine semolina to the skillet and fry until it turns very light brown and crunchy (2-3 minutes). Keep stirring continuously. Transfer the roasted rava to a plate and keep it aside.
  • Wipe the same skillet with a paper towel to get rid of any semolina sticking to it and add the remaining ghee to it. Heat it over medium-high heat.
  • Once the ghee is hot, add mustard seeds, curry leaves, split, and skinned black lentils (urad dal), Bengal gram (chana dal), and halved cashew nuts and fry until they turn slightly brown (1-2 minutes).
