RED QUINOA

Fresh apple slices add seasonal flavor to this quick-cooking and nutrient-packed grain.

Red Quinoa image

Steps:

  • Heat oil in a small saucepan over medium-high heat. When oil shimmers, add onions and salt and cook until translucent, 3 minutes.
  • Add quinoa and 1 cup water and bring to a boil. Reduce heat and simmer, covered, until grains have expanded and water has evaporated, 15 minutes.
  • Remove from heat, stir in apples and lemon juice and serve.

1 tablespoon olive oil
1/2 cup finely chopped yellow onion
1/2 teaspoons coarse salt
1 cup red quinoa, soaked and drained
1 Granny Smith apple, peeled, cored, and julienned
Juice of 1/2 lemon

Steps:

  • Place the water, butter, five-spice powder, ginger, black pepper, and beef bouillon cube into a saucepan over medium heat, and bring to a boil. Stir the mixture to dissolve the bouillon cube, then add the quinoa. Reduce heat to a simmer, cover, and cook until all the water is absorbed, about 20 minutes.

Hot and Zesty Quinoa image

Steps:

  • In a small saucepan, bring water to a boil. Add quinoa. Reduce heat; cover and simmer for 12-15 minutes or until liquid is absorbed. Remove from the heat; fluff with a fork., In a large skillet, saute onion in oil until tender. Add garlic; cook 1 minute longer. Add tomatoes and green chilies. Bring to a boil over medium heat. Reduce heat; simmer, uncovered, for 10 minutes. Stir in quinoa and artichoke; heat through. Sprinkle with cheese.

RED WINE RISOTTO STYLE QUINOA image

Steps:

  • Dice medium sized shallot. Melt butter in skillet on low heat. (Can substitute olive oil if desired, but butter will result in a better flavor.) Add diced shallot and cook until soft. Add salt and pepper to taste. Add quinoa and stir. Make sure quinoa is coated with oil. Add red wine -- a full bodied, fruity wine like Merlot is best. Red wine should just cover quinoa. Allow red wine to cook down before adding chicken broth. Add chicken broth slowly, a little at a time. Stir occasionally. Continue adding chicken broth until quinoa is soft. When ready to finish, add another dash of red wine, turn the heat up, and allow the red wine to cook off. Turn stove off. Drizzle with truffle oil to taste and stir. Serve. Makes 2 servings. Top with parmesan.

Except this doesn't have nearly as much bite, and has real nutritional value! You can use regular pearl quinoa, but red quinoa has a different taste and it just looks so much more appealing!

Steps:

  • Bring 4 cups of water to a boil. While it boils, THOROUGHLY rinse the quinoa in a large bowl-- cover the grains in cold water and swish a whisk around for 1-2 minutes until all the soapy residue comes off, then put into a colander and rinse again under cold water. This step is VERY important or else you'll have gross, bitter-tasting quinoa!
  • Lower the heat and carefully add the oil and seasonings to the water. Shake a little salt and pepper in, but use the measuring spoons for the cinnamon and chili powder. Mix those spices in and make sure there's no clumps.
  • Add the rinsed quinoa, loosely cover the pot, and let simmer for 20-25 minutes or until the quinoa is nice and soft and has absorbed all/most of the water.
