HOLIDAY RIBBON GELATIN

- In a large bowl, dissolve lime gelatin in 2 cups boiling water. Add 2 cups cold water; stir. Pour into a 13-in. x 9-in. dish; refrigerate until firm but not set, about 1 hour., In a large bowl, dissolve lemon gelatin in 1 cup boiling water. Stir in marshmallows until melted. Cool for 20 minutes. In a small bowl, beat cream cheese and mayonnaise until smooth. Gradually beat in lemon gelatin. Stir in pineapple. Carefully spoon over the lime layer. Chill until firm but not set. , Dissolve cherry gelatin in 2 cups boiling water. Add remaining cold water; stir. Spoon over the lemon layer. Refrigerate entire gelatin salad overnight. Cut into squares to serve.

RED, WHITE AND BLUE GELATIN FLAG

Steps:
- Spray two half baking sheets and a quarter baking sheet with cooking spray. Set aside in the refrigerator.
- For the strawberry layer: Combine the hot water, plain and strawberry gelatin. Once thoroughly combined, pour the strawberry layer into one of the half baking sheets in the refrigerator. After 15 minutes of cooling, add some strawberry slices, if desired. Allow the gelatin to cool until set, about 2 hours.
- For the white layer: Combine the hot water, sweetened and unsweetened coconut milk, whole milk and plain gelatin. Once thoroughly combined, pour the white layer into the other half baking sheet in the refrigerator. Allow to cool until set, about 2 hours.
- For the blue layer: Combine the hot water and the blue and plain gelatin. Once thoroughly combined, pour the blue layer into the quarter baking sheet in the refrigerator.
- Once the layers are set, remove them from the refrigerator.
- Turn the red layer out onto a parchment-lined platter or cutting board. Slice two-thirds of the white layer into strips and reserve the remaining third to punch out stars with a star-shaped cookie cutter. Top the red layer with the white stripes. With the widest side of the blue layer facing you, cut the layer in half from the top of the baking sheet to the bottom. Add one portion of the blue layer on top of the white stripes on the top left portion of the flag. Top the blue layer with the white stars. Using a piping bag fitted with a star tip, pipe out a whipped cream border and top with blueberries.

Steps:
- Follow directions on gelatin box to prepare gelatin. Let set until syrupy (soft-set).
- Add pineapple, cream cheese, whipping cream, and optional nuts. Mix all ingredients together in a mixer.
- Turn into a mold and let sit in refrigerator until fully firm.
- Turn out from mold onto plate. Cut into sections and enjoy.

RED & GREEN HOLIDAY BOWL
Here's a layered, fruit-filled JELL-O dessert that doesn't require a mold. It's just as dramatic looking, and just as delicious.

Steps:
- Stir 2 cups boiling water to each flavor gelatin mix in separate medium bowl; stir 2 min. until completely dissolved. Stir 1 cup cold water into gelatin in each bowl. Refrigerate lime gelatin 1-1/2 hours or until thickened. Let cherry gelatin stand at room temperature.
- Stir pineapple into thickened lime gelatin. Pour into 4- to 5-qt. glass bowl. Refrigerate 30 min. or until gelatin is set but not firm (gelatin should stick to finger when touched and should mound).
- Beat cream cheese and sugar with whisk or mixer until well blended. Stir in 2 cups COOL WHIP. Spoon over lime gelatin layer in bowl; refrigerate. Meanwhile, refrigerate cherry gelatin 1-1/2 hours or until thickened.
- Add oranges to cherry gelatin; spoon over cream cheese layer. Refrigerate 3 hours or until firm. Serve topped with remaining COOL WHIP.

HOLIDAY GREEN GELATIN SALAD
This salad has been a family favorite for over four generations, requested every Thanksgiving and Christmas. It is smooth and creamy with the crunch of pecans, and light green in color. It has a very unique flavor, and goes very quickly at our home. Any left over crushed pineapple and cottage cheese make a great snack for kids.

- In a large measuring pitcher, mix reserved pineapple juice and enough water to yield 2 cups. Pour into a pot and bring to a boil. Add the lime and lemon gelatin mixes and stir until completely dissolved.
