RED, WHITE, AND BLUE DIPPED STRAWBERRIES
Here is a simple appetizer or dessert. I learned to make chocolate dipped strawberries in a Wilton Candy Making Class. Its easy to decorate them with sprinkles, coconut, nuts, or gel (like the one pictured) for any holiday. This one is dressed for the July 4th picnic!

Steps:
- Clean strawberries and leave stems as long as possible. Be sure berries are dry before decorating. Melt candy melts or confectionary coating as directed on package. Be careful not to get it too hot. Let cool a few moments. Dip berries in candy and shake off excess. Sit on waxed paper to Let harden at room temperature.
- When candy is set use red and blue gel to drizzle red and blue designs on the white candy. Do not refrigerate. Set in a cool place until ready to serve. These should be served within a couple of hours after completed.
- NOTE: Confectionary coating and colored decorating gels are available in most larger grocery stores in the cake decorating section. Wilton also sells candy melts online and in stores that specialize in cake decorating. They have a sparkling gel that is really pretty for these berries.

- Once strawberries are dry, place them on a dish and let them chill in the refrigerator. In a double boiler, gently melt White Chocolate (1 cup), stirring occasionally.
- Once just melted, pour white chocolate into a small bowl, crush Freeze Dried Blueberries (1 cup) with a rolling pin or pulse in a food processor until you achieve small uniform crumbs.
- Stir slightly cooled white chocolate to ensure an even consistency. Take chilled strawberries and dip 2/3 of each strawberry into the white chocolate. Set dipped strawberries on a parchment lined baking sheet.
