HOMEMADE TWINKIE'S AND ZINGERS
This recipe is my creation because I loved these treats as a kid and wanted my kids to experience them, but without all of the chemicals and additives and aftertaste. These are a great snack/dessert for the family. A bit time-consuming, but not bad and so worth it anyway. Enjoy!

- 1. To make boats, use a piece of aluminum foil cut to about 14 inches. Fold in half lengthwise, then in half widthwise. Using a spice jar, form the foil around the jar by folding in the ends and folding down any excess foil to create a boat shape similar to a Twinkie shape. You can also buy the Twinkie pan online or in bakery supply stores. Spray with non-stick baking spray.
- 2. To make cake: In bowl mix eggs, oil, and water until combined. Add cake mix and blend for 2 minutes on medium speed. Blend in pudding mix on medium for an additional 3 minutes until smooth. Place 2.25 oz. of batter into each boat and bake at 325° for 11-15 minutes or until a toothpick inserted in center of one comes out clean. Cool completely.
- 3. To make filling: Combine butter, shortening, vanilla, and salt in mixer bowl and blend on medium high for about 3 minutes or until mixture comes together and becomes creamy with no lumps. Add confectioner's sugar and starting on low speed and gradually increasing to high, blend until light and airy. Add marshmallow fluff and blend on high until once again light and airy.
- 4. For Zingers: Boil water, add Jell-O and stir to combine. Place in refrigerator for 15 - 30 minutes or until thick but not set. Place coconut flakes in food processor and pulse until flakes are very small. Dump into a dish and add cornstarch, starting with 2 T. and increasing if necessary to get a nice loose texture.
- 5. For Twinkies: With a knife, cut a small slit in the top side of the cake. Using an icing bag, pipe a good amount of filling into the cavity, holding the shape of the cake with your hand to prevent splitting. Once filled, place cut side down on the cooling rack and continue to fill remaining cakes.
- 6. For Zingers: Fill cakes as for Twinkles. Once that is completed, place the prepared Jell-O into a low baking dish or other container and roll the cake to cover completely. Move somewhat quickly to avoid completely soaking the cake. Placing the coconut in a similar dish, immediately roll the cake in the prepared coconut and place on the rack to set for approximately 2 hours.
RED ZINGER CAKE
This cake is so easy to make and is one of my DH's favorite. Tastes better than a zinger that you remember as a child... or even now.

- Preheat oven to 350°F Grease bottom only of 13x9 pan.
- Prepare cake batter by beating cake mix, water, oil and eggs in large bowl on low speed 30 seconds, then on medium speed 2 minutes.
- Stir in the raspberry jello powder.
- Pour into prepared pan (13x9).
- Bake aproximately 30 minutes or until golden brown (follow baking time on cake box).
- Remove cake from oven and immediately poke holes all over the cake with a fork and then pour the condensed milk all over the top;.
- spread raspberry preserves over that and let the cake cool completely. (optional: add 1 Tbls Chambord raspberry liquer to preserves).
- Top with Cool Whip and then sprinkle with coconut.

FRESH GINGER CAKE
David Lebovitz's headily spiced cake, which Amanda Hesser wrote about in The Times in 1999, calls for a quarter-pound of fresh ginger. Mr. Lebovitz, who was a pastry chef at Chez Panisse in Berkeley, Calif., has since had a long career as a cookbook author and blogger. But this recipe, from his second cookbook, "Room for Dessert," is from relatively early in his writing career. Boldly flavored with just cinnamon, cloves, black pepper and, yes, a lot of fresh ginger, it is simplicity exemplified, coming together quickly and without a mixer. The cake - much like the recipe itself - ages well, its flavors melding and deepening over time.

- Position rack in center of oven and heat to 350 degrees. Line a 9-inch round cake pan with 3-inch sides, or a 9-inch springform pan, with a circle of parchment paper.
- In a medium bowl, mix together the molasses, sugar and oil. In separate medium bowl, sift together flour, cinnamon, cloves and black pepper.
- In a small saucepan, bring 1 cup water to a boil. Stir in baking soda, then mix hot water into molasses mixture. Stir in ginger.
- Gradually whisk the dry ingredients into batter. Add eggs, and continue mixing until everything is thoroughly combined. Pour the batter into the prepared cake pan, and bake for about 1 hour, until the top of cake springs back lightly when pressed or until a toothpick inserted into the center comes out clean. If the top of cake browns too quickly before cake is done, drape a piece of foil over it and continue baking.
- Cool cake for at least 30 minutes. Run a knife around the edge of cake to loosen it from pan. Invert cake onto a cooling rack, and remove parchment paper.

- Preheat oven to 350 degrees. Grease and flour two (9-inch) round cake pans. Place two wire rack over two baking sheets; set aside.
- CAKE: In a large bowl, whisk together cake mix and vanilla pudding mix. Make a “well” in the center. Add eggs, water and cooled melted butter. Beat on medium speed for about 1 minute until batter is smooth and thick. Spread evenly into prepared pans.

- After the cake has baked, remove from the oven and allow to cool for 30 minutes. Using the handle end of a wooden spoon or a meat fork, poke cake every inch or so with the handle of wooden spoon or tines of meat fork halfway into the cake. There is no set number of holes, but you want plenty of places to fill. Mix the raspberry gelatin with 2 cups of hot water until dissolved. Pour the Jello evenly over the cake, trying to fill the holes as much as you can.
- In a small bowl, microwave the raspberry preserves until easy to spread, about 30 seconds. Pour the preserves over the top of the cake and spread evenly. Top with Cool Whip. Sprinkle the shredded coconut over the top. Refrigerate for at least 4 hours before serving.
