Steps:

  • Place the cream, vanilla bean, and sugar in a saucepan and bring to a simmer. Remove from the heat.
  • Remove the vanilla bean and split lengthwise. Scrape the vanilla beans into the cream.
  • Squeeze the gelatin leaves to remove any excess water, then add them to the pan, stirring constantly about 30 seconds, or until the gelatin is melted.
  • Drizzle about 2 teaspoons honey into the bottom of 6 (4-ounce) molds. Ladle the cream mixture into each. Refrigerate for several hours, until thoroughly chilled.
  • To remove from the mold: Dip the bottom of the mold into a pot of hot water to loosen the panna cotta. Slide a knife around the edge, then carefully turn over onto a serving plate. Drizzle with the remaining honey and garnish with hazelnuts, if desired.

3 cups heavy cream
1 vanilla bean
1/2 cup granulated sugar
2 1/2 gelatin leaves, soaked in cold water for about 4 minutes
1/2 cup honey
Ground and toasted hazelnuts, optional

Steps:

  • Pour 1/4 cup cold water into a small saucepan and sprinkle gelatin evenly over; let sit 10 minutes to soften.
  • Meanwhile, coat a 9"-diameter pie or cake pan with a thin film of oil; set aside. Combine ricotta, powdered sugar, vanilla, salt, and 1 cup half-and-half in a food processor.
  • When gelatin is softened, add remaining 1/2 cup half-and-half to saucepan and set over low heat. Cook, stirring with a heatproof spatula, until gelatin is completely dissolved (do not let mixture boil). Scrape mixture into food processor and process until completely smooth, about 30 seconds. Pour into prepared pan and chill until set, at least 4 hours (cover loosely with plastic wrap after 1 hour).
  • Run a butter knife or small offset spatula around sides of panna cotta to loosen the edge and break the suction.
  • Fill a baking dish or similar vessel with hot water. Lower bottom of mold into water 5 seconds, then lift it back out.
  • Press a serving plate firmly over top. Quickly invert in one motion; set plate down. Use knife or spatula to gently lift up mold.
  • Top with nectarines; drizzle with honey and oil.
  • Panna cotta (without nectarines, honey, and oil) can be made 2 days ahead. Keep chilled.

1 envelope unflavored powdered gelatin (about 2 1/2 tsp.)
Extra-virgin olive oil (for pan and drizzling)
2 cups whole-milk fresh ricotta
1/3 cup powdered sugar
1/2 tsp. vanilla extract
1/2 tsp. kosher salt
1 1/2 cups half-and-half, divided
2 large or 3 medium nectarines, cut into 1/2"-thick wedges
Honey (for drizzling)

Steps:

  • Heat the oven to 400 degrees F.
  • Pour the orange juice into an 8 by 8-inch pan. With the tip of a sharp knife, scrape the insides of the vanilla bean into the pan, reserving the outside pod. Place the nectarines cut side down in the pan. Sprinkle with sugar and lay the vanilla pod on top of the nectarines. Bake until the nectarines are slightly slumped and feel a little soft, about 10 to 12 minutes. Let cool in the pan to room temperature, then remove the nectarines from the pan and chill until ready to serve. Reserve any pan juices to pour over the nectarines later.
  • Meanwhile, blend the ricotta with the honey in a food processor until smooth. Chill until ready to serve. To serve, turn the nectarines over and spoon the cheese filling into the cavity. Sprinkle with cinnamon sugar (if using) and serve immediately. Place 3 on each plate and drizzle the reserved pan juices over the stuffed nectarines.

1/2 cup orange juice, heated
1 vanilla bean, split lengthwise
6 nectarines, halved lengthwise and pitted
2 tablespoons sugar
3/4 cup skim milk ricotta
3 tablespoons honey
Cinnamon sugar, for sprinkling (optional)

Steps:

  • Make the crust: Pulse the flour, sugar and salt in a food processor. Add half of the butter and pulse until the mixture looks like coarse meal. Add the remaining butter and pulse into pea-size pieces. Add 1 egg, the lemon juice and 3 tablespoons ice water and pulse until the dough clumps together but has not yet formed a ball. Turn out the dough onto a piece of plastic wrap; press into a disk and wrap. Refrigerate until firm, at least 1 hour or overnight.
  • Preheat the oven to 400 degrees F and line a baking sheet with parchment paper. Roll out the dough into a 12-inch round on a lightly floured surface. Transfer the dough to the prepared baking sheet and refrigerate, 10 minutes.
  • Meanwhile, make the filling: Toss the nectarines with the honey, flour, vanilla and rosemary in a large bowl. Spoon the nectarine mixture onto the dough, leaving about a 3-inch border. Fold the edge of the dough over the fruit by about 2 inches, pleating as needed. Lightly beat the remaining egg with 1 teaspoon water. Brush the dough with the egg wash. Refrigerate until firm, about 20 minutes.
  • Scatter the butter over the fruit. Bake until the crust is golden brown and the filling is bubbling, 40 to 45 minutes. Let cool on the baking sheet. Serve with ricotta and honey.

1 1/2 cups all-purpose flour, plus more for dusting
1 tablespoon sugar
1/2 teaspoon salt
1 stick cold unsalted butter, cut into small pieces
1 large egg, plus 1 egg for brushing
1 teaspoon fresh lemon juice
3 ripe nectarines or peaches (about 1 1/4 pounds), pitted and cut into 1/4- to 1/2-inch wedges
2 tablespoons honey, plus more for serving
1 tablespoon all-purpose flour
1/2 teaspoon pure vanilla extract
1/2 teaspoon roughly chopped fresh rosemary
1 tablespoon cold unsalted butter, cut into small pieces
Fresh ricotta cheese, for serving

Use POLY-O Ricotta in all recipes that require ricotta. POLY-O Ricotta is one of the best tasting ricottas that I have tried. I find POLY-O Ricotta to have a sweeter, nicer taste and texture than other brands.

GRILLED HONEY-NECTARINE RICOTTA TOAST

This sweet and creamy ricotta toast makes the perfect brunch or mid-day snack. Grilling the fruit adds a lovely caramelized flavor, topped with the sweetness from the honey, crunch from the almonds and brightness from the hint of fresh mint. Use a thick-cut crusty bread like sourdough so it can stand up to the toppings.

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil grate.
  • Drizzle 1 teaspoon olive oil onto a small plate. Place nectarine wedges on the plate and cover all sides with oil. Brush both sides of bread with 2 tablespoons olive oil.

  • Place bread slices onto the hot grate and cook until grill marks appear and bread is toasted, about 1 minute per side; remove to a plate.
  • Spread ricotta cheese onto each slice of toast. Arrange 8 nectarine slices onto each toast and top with almonds. Sprinkle with mint and drizzle with honey. Cut each toast in half and serve.
