RISE AND SHINE MUFFINS

Breakfast ready in 35 minutes! Enjoy these orange flavored muffins made using Fiber One® cereal - a great start to your day!

Rise and Shine Muffins image

Steps:

  • Heat oven to 400°F. Spray bottoms only of 12 regular-size muffin cups with cooking spray or line with paper baking cups. In medium bowl, mix orange juice, honey, oil and egg.
  • In large bowl, stir Bisquick mix, cereal, baking soda and 1/2 cup of the nuts. Stir orange juice mixture into cereal mixture just until moistened. Spoon batter into muffin cups. Sprinkle with remaining nuts.
  • Bake about 20 minutes or until golden brown. Immediately remove from pan.
  • In small bowl, mix cream cheese and marmalade until well blended. Serve muffins with spread.

Very good hearty muffin. It is full of good things like apple, raisins, carrots, coconut, walnuts. Great to grab on the way out the door. The recipe comes from The United Churches in Canada lets Break Bread Together. This church recipe is from Brighouse United Church, Richmond, British Columbia

Steps:

  • In large bowl combine flour, baking soda, sugar, cinnamon, and salt.
  • Stir in grated carrot, raisins, walnuts, coconut and apple.
  • In a bowl beat together eggs, oil, and vanilla.
  • Stir in flour mixture until batter is just combined.
  • Spoon into lined muffin tins, filling to top.
  • Bake at 350°F for 25-30 minute.

  • 1. Heat oven to 400°. Grease bottoms only of 12 medium muffin cups, 2 ½ x 1 ¼ inches, with shortening, or line with paper baking cups.2. Place cereal in plastic bag or between sheets of waxed paper crush with rolling pin (or crush cereal in blender or food processor) set aside. Mix orange juice, honey, oil and egg set aside.3. Mix Bisquick®, cereal, baking soda and ½ cup of the nuts in medium bowl. Make a well in center of cereal mixture stir in orange juice mixture just until moistened.   • Preheat oven to 350.
  • Mix the first 12 ingredients together.
  • Next add remaining 3 ingredients.
  • Mix well.
  • Using greased muffin cups or paper lined cups, fill 3/4 full of batter.
  • Bake at 350 for 20-25 minutes.

Cranberry-Orange Tea Bread Muffins W/ Orange Cream Cheese Glaze image

Steps:

  • Preheat oven to 350 degrees.
  • Bake pecans in a single layer in a shallow pan 8-10 minutes or until toasted and fragrant, stirring occasionally,.
  • Whisk together flour, baking powder, and salt.
  • Pulse cranberries and sugar in a food processor 3-4 times or just until chopped.
  • Beat butter at medium speed with an electric mixer until creamy. Add eggs, beating until well blended. Gradually add flour mixture alternately with orange juice, beginning and ending with flour mixture. Beat at low speed until blended after each addition. Stir in cranberry mixture and pecans.
  • Place baking cups in miniature muffin pans; coat with cooking spray. Spoon batter into baking cups, filling completely.
  • Bake for 25 minutes or until a wooden pick inserted in center of muffin comes out clean. Remove from pans to a wire rack. Spoon Orange Cream Cheese Glaze over warm muffins.
  • Orange Cream Cheese Glaze: Beat one 3 oz. package of softened cream cheese at medium speed until creamy. Add 1 tablespoons orange juice and 1/4 tsp of vanilla; beat until smooth. Gradually add 1 1/2 cup sifted powdered sugar, beating until smooth.
