- Cut 1/4 inch off top of garlic head, leaving papery skins intact; discard top. Place garlic head on sheet of foil; drizzle with 1/2 tsp. oil. Wrap in foil. Bake 30 min. Cool.
- Heat oven to 350ºF. Slip roasted garlic from skins into large bowl; mash to a paste. Add sour cream, cheeses and mayo; mix well. Add beans; stir to evenly coat.
- Spoon into 13x9-inch baking dish sprayed with cooking spray. Mix cracker crumbs and remaining oil; sprinkle over bean mixture.
- Bake 25 min. or until heated through.

- Prepare the fried onion topping. Preheat the oven to 475F. Slice the onion thinly. Place onion in a small bowl. Add the remaining fried onion topping ingredients and toss to combine. Use as much milk as is necessary for it to just stick together.

- Make the sauce. In a large skillet, melt the butter over medium high heat. Add the mushrooms, salt, and black pepper. Stir to combine and cook until the onions just start to release some liquid, approximately 3-5 minutes.
