GARLIC ROASTED POTATOES
Ina Garten's Garlic-Roasted Potatoes from Food Network's Barefoot Contessa make the perfect classic side dish for any meal.

Steps:
- Preheat the oven to 400 degrees F.
- Cut the potatoes in half or quarters and place in a bowl with the olive oil, salt, pepper, and garlic; toss until the potatoes are well coated. Transfer the potatoes to a sheet pan and spread out into 1 layer. Roast in the oven for 45 minutes to 1 hour or until browned and crisp. Flip twice with a spatula during cooking in order to ensure even browning.
- Remove the potatoes from the oven, toss with parsley, season to taste, and serve hot.
ROASTED POTATOES POUPON
A simple side dish from Meals Made Easy with Grey Poupon. We really enjoyed these, but the onions were over cooked by following the directions. Next time, I will add the onions about 1/2 way thru cooking.

- 1. In small bowl, combine mustard and oil.
- 2. In large bowl, combine potatoes, onions, and mustard mixture; toss to coat well.
- 3. Spread in 15 1/2 x 10 1/2 x 1 inch baking pan. Bake at 400F for 45-50 minutes or until potatoes are tender and crispy; stirring once.
- 4. Garnish with parsley.
