ROASTED LAMB WITH MINT CHIMICHURRI

- Preheat the oven to 450 degrees F.
- Rub the lamb with 1/4 cup of the olive oil and season both sides with salt and pepper. Arrange the lamb fat-side up on a roasting pan and roast 15 minutes. Lower the temperature to 350 degrees F and roast until golden brown and a meat thermometer inserted in the center of the lamb reads 130 degrees F, another 25 to 30 minutes.
- While the lamb roasts, make the chimichurri. Combine the mint, parsley, oregano, garlic, serrano and 1 teaspoon salt in a food processor and blend. With the machine running, drizzle in the lime juice and remaining 1/2 cup olive oil and process just until fully combined. Taste and season with salt and pepper.
- Remove the lamb from the oven and allow it to rest for 10 minutes. This will allow the juices to redistribute and the lamb will continue to cook. The temperature should read 140 degrees F. Slice the lamb against the grain and add to a platter. Top with some of the chimichurri and serve the remaining sauce alongside the meat at the table.
RACK OF LAMB
Steps:
- In the bowl of a food processor fitted with a steel blade, process the salt, rosemary, and garlic until they're as finely minced as possible. Add the mustard and balsamic vinegar and process for 1 minute. Place the lamb in a roasting or sheet pan with the ribs curving down, and coat the tops with the mustard mixture. Allow to stand for 1 hour at room temperature.
- Preheat the oven to 450 degrees F.
- Roast the lamb for exactly 20 minutes for rare or 25 minutes for medium-rare. Remove from the oven and cover with aluminum foil. Allow to sit for 15 minutes, then cut into individual ribs and serve.
ROASTED RACK OF LAMB

- Preheat oven to 450 degrees F (230 degrees C). Move oven rack to the center position.
- In a large bowl, combine bread crumbs, garlic, rosemary, 1 teaspoon salt and 1/4 teaspoon pepper. Toss in 2 tablespoons olive oil to moisten mixture. Set aside.
- Season the rack all over with salt and pepper. Heat 2 tablespoons olive oil in a large heavy oven proof skillet over high heat. Sear rack of lamb for 1 to 2 minutes on all sides. Set aside for a few minutes. Brush rack of lamb with the mustard. Roll in the bread crumb mixture until evenly coated. Cover the ends of the bones with foil to prevent charring.
- Arrange the rack bone side down in the skillet. Roast the lamb in preheated oven for 12 to 18 minutes, depending on the degree of doneness you want. With a meat thermometer, take a reading in the center of the meat after 10 to 12 minutes and remove the meat, or let it cook longer, to your taste. Let it rest for 5 to 7 minutes, loosely covered, before carving between the ribs.

LAMB WITH MINT CHIMICHURRI
Though far less glorified than rib chops or legs, lamb shoulder is explosively delicious and juicy. Like the shoulders of pigs and cows, it is a hardworking muscle rippled with intramuscular fat, which makes it ideal for the stewing or braising that's requisite this times of year. But the shoulder's not that hardworking, which keeps it tender enough to be subjected to the shorter blasts of heat typically reserved for more elegant cuts.

- Combine parsley, mint, olive oil, lemon juice, garlic, red chile flakes, salt and pepper. Rub half of the mixture over 2 pounds of lamb shoulder chops or chunks, and marinate overnight.
- Heat a grill or broiler with the rack 4 to 6 inches from the flame. Wipe off the marinade; grill or broil, turning once, until medium, 4 or 5 minutes per side. Serve with the remaining chimichurri.

- Place the parsley, oregano, sea salt, cayenne, black pepper, garlic, and olive oil in your food processor and blend until combined. It will still be a bit chunky. If you don’t have a food processor, you can finely chop everything by hand.
- Spread the Dijon mustard evenly over the meat on both sides of the racks of lamb. Rub a little of the herb mix over the back side (the concave side) of the lamb then place the racks, back side down, on the baking sheet. Press the remaining herb mix onto the meaty part of the lamb. Set aside at room temperature for 30-60 minutes.
- While the lamb is sitting, prepare the mint chimichurri. Stir all the chimichurri ingredients together in a medium-sized bowl. If you prefer, you can use your food processor, but I like the results of hand mincing the herbs better. Set aside.

- Melt 1 tablespoon of the butter in a saucepan. Add the onion and thyme and cook over moderate heat, stirring, until the onion is translucent. Stir in the rice and cook for 2 minutes. Add the chicken stock and bring to a simmer. Reduce the heat to low, cover and cook, stirring, until tender, about 30 minutes for black rice and 45 minutes for wild rice. Season with salt and pepper.
- Preheat the oven to 350° Spread the kosher salt in a roasting pan and set the shallots on top. Bake for about 45 minutes, or until tender. Let cool, then peel the shallots and trim the root ends. Raise the oven temperature to 450°.
- Cut the lamb racks in half to form 4-chop racks. Season with salt and pepper and coat each rack with 1/2 tablespoon of the Chimichurri Sauce. Melt 1 tablespoon of the butter in the oil in an ovenproof skillet. Add the lamb racks, fat side down, and sear over high heat, turning once, until well browned all over, about 2 1/2 minutes per side.
- Transfer the skillet to the oven with the racks fat side up and roast for about 10 minutes for medium-rare meat. Let rest for 5 minutes. Meanwhile, in a small skillet, melt the remaining 1/2 tablespoon butter. Add the roasted shallots and toss over moderately high heat until warmed through. Season with salt and pepper. Rewarm the rice.
