Steps:

  • In a microwave-safe bowl, heat chili and corn on high for 2 to 4 minutes or until heated through. Place corn chips in four large soup bowls; top with the chili mixture, lettuce, cheese, oives, sour cream and salsa.

2 (14.3 oz. ea.) cans chili with beans
1 (10 oz.) pkg. frozen corn
4 cups corn chips
1 cup shredded lettuce
1 (4 oz.) cup shredded Mexican cheese blend
1 (2-1/4 oz.) can sliced ripe olives, drained
1/4 cup sour cream
1/4 cup salsa

CHILI

This bean-rich, ground beef chili will not only be delicious today, but it might even taste better tomorrow. Adjust the red pepper sauce to your own preference, and be sure to serve this easy chili recipe with plenty of optional toppings, including chopped black olives, fresh limes, guacamole, shredded cheese, salsa, shredded lettuce and sour cream.

Steps:

  • In 3-quart saucepan, cook beef, onions and garlic over medium heat 8 to 10 minutes, stirring occasionally, until beef is thoroughly cooked; drain.
  • Stir in chili powder, oregano, cumin, salt, pepper sauce and tomatoes.
  • Heat to boiling over high heat. Reduce heat just enough so mixture bubbles gently. Cover; cook 1 hour, stirring occasionally.
  • Stir in kidney beans. Heat to boiling over high heat. Reduce heat just enough so mixture bubbles gently. Cook uncovered about 20 minutes, stirring occasionally, until desired thickness.

Steps:

  • In 5 quart saucepan, stir together ground beef, onion, and minced garlic, and cook until meat is browned.
  • In small bowl, combine tomato paste, worchestershire, barbeque sauce, chili powder, brown sugar, soy sauce, cumin, salt, minced onion, pepper, and celery salt.
  • Drain fat from beef, then stir in seasoning mixture.
  • Bring to simmer over medium high heat, and cook, stirring, 5 minutes.
  • Add tomatoes, chili beans, green pepper, and celery.
  • Reduce heat to low, and cook, covered 1 hour, stirring occasionally.

  • Brown mean with onions and garlic in small amount of oil. Add tomatoes, tomato paste, chilies, jalapenos, seasonings, beef broth, and water. Bring mixture to a boil. Reduce heat to low and cook 4-5 hours, stirring occasionally. Adjust seasonings, if necessary. Add beans during last 30 minutes of cooking. Serve hot in bowls with an assortment of condiments such as grated cheeses, sliced olives, pico de gallo, chopped onions, etc.

  • In a large saucepan, cook beef and onion in oil over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer.
