ROSE MARY'S BREAD PUDDING
My mother use to make bread pudding from left over biscuits from breakfast. With such a large family nothing was ever thrown away. So I made this recipe from left over Hot Dog and Hamburger buns, & some whole wheat buns, to add a little extra fiber to the diet, I also added chopped apples with the skin on to add additional fiber....

- 1. Add raisins to small bowl and pour pour rum,bourbon or grand Marnier, over raisins. Cover with paper towel and microwave for 2-3 minutes. Remove, from microwave and allow to steep while covered till raisins are plump, about 8 to 10 minutes.
- 2. PREHEAT OVEN TO 350 DEGREES F.Lightly grease the cast iron skillet, or 9X13X2 inch casserole dish,or use cooking spray, and set aside till needed.
- 3. Combine the bread cubes with the mini chocolate chips,add the steeped raisins along with what ever liquid remains, chopped or grated apples & set aside.
- 4. In a large bowl beat eggs with whisk, stir in whole milk, heavy whipping cream, butter,brown sugar, salt & spices. Mix well. Pour over bread cubes mixture. Stir to mix well. Allow to set for at least 30 minutes until most of liquid has been absorbed. Pour into prepared skillet or dish. Sprinkle with nuts. Bake uncovered for 55 minutes to an hour, or until knife inserted in center comes out clean. Serve with butter Sauce if desired, or drizzle with caramel syrup.
- 5. BUTTER SAUCE: To make the butter sauce, cream together butter and sugar. Add egg yolk, and evaporated milk. Cook in a double boiler. Mix cornstarch with 1 cup milk, mix well, and pour into cooked mixture. Cook until thickened. Remove from heat, and add 2 teaspoons of butter extract or vanilla, then serve over bread pudding. Top with whipped cream if desired and garnish with a cherry half.
- 6. I gave you my original recipe, but this time I used stale hot dog and hamburger buns with whole wheat rolls. I always learned to be creative and recreate when it came to food, because we could not afford to throw any away, with 13 people in our family.
ROSE MARY'S YORKSHIRE PUDDING
I use this recipe every time I make the Horseradish Crusted Prime Rib. It really does taste great with the Au Jus Gravy. This version of the recipe is adapted from Tyler Florence recipe, and I prefer it to any others that I have made before. My family loves this version much better than another recipe that I had used.

- 1. PREHEAT OVEN TO 450 DEGREES F. Measure equal amounts of oil into a 12 cup muffin pan, and place in oven to get really hot, but not burning while you prepare the flour mixture.
- 2. Sift the flour and salt in one bowl. In a separate bowl beat together the eggs with the milk until light and frothy. Then stir in the dry ingredients till well incorporated and no visible lumps, either use a hand mixer or heavy duty whisk.
- 3. Carefully remove the muffin tin from the oven, and slowly fill each cup about 1/3 full at first, and then if there is some left over add to each cup till all is used up, and all are equally filled.
- 4. Place the muffin tin back into the oven and cook until puffed and dry, about 18 to 20 minutes. Serve with pan gravy from the roast.
- 5. NOTE: Yorkshire pudding is more like a muffin than a pudding, but is traditionally served with Prime Rib, and the Au Jus gravy that comes from the roast. When cooked it is hallow on the inside, it puffs up and pops over, sort of like a popover. It is used to sop up all of the gravy that comes from the roast.FYI: They are not that great if you use them the next day.
EBONY'S ROSE PETAL PUDDING
Freda DeKnight introduced many signature dishes to Ebony magazine in the mid-20th century. One was her rose petal pudding, which was beloved by Ebony staffers and readers alike. Although its origin story is unclear, it's likely that Ms. DeKnight, the magazine's food editor and a frequent traveler, created the dessert from her research and willingness to incorporate international flavors into her cooking. This warm pudding provides a sweet taste of one of the most significant culinary periods in the nation. The rose icing is divine, and the aromatic pudding, which resembles bread pudding, is really lovely. The original recipe calls for 1/4 cup of rose water, which will give the pudding a very pronounced floral flavor, so you can choose an amount that is pleasing to you.

- Make the pudding: Butter a 7- to 8-cup heatproof pudding mold or other deep baking dish or bowl.
- Meanwhile, combine the bread crumbs, sugar, almonds, baking powder, salt, mace and rose petals in a large bowl or bowl of a stand mixer. Using an electric hand mixer or the paddle attachment of a stand mixer, mix the dry ingredients just to blend, about 10 seconds, then add the butter and beat until well combined, about 1 minute. In a medium bowl, beat the eggs with the milk, lemon juice and rose water. Add to the bread mixture and beat until everything is evenly moistened, about 1 minute.
- Spoon the pudding mixture into the prepared mold; it should come two-thirds up the sides of the mold. Cover tightly with aluminum foil, crimping it around the edges to seal.
- Place the covered mold in a wide pot or Dutch oven large enough to fit it with space around and over it. Add enough water to the pot to meet the middle of the bowl. Bring the water to a boil over medium heat, then cover the pot and reduce the heat to maintain a low simmer. Steam, replenishing with boiling water as needed so there's always enough to reach the middle of the bowl, until a skewer inserted in the center comes out clean, 1 1/2 to 2 hours. Cover tightly with foil again if the pudding needs to continue steaming after you insert the skewer.
- When the pudding is done, uncover the pot and let the pudding cool in the pot for about 5 minutes. Wearing oven mitts or protecting your hands with kitchen towels, grip the mold and transfer it to a heatproof work surface. If the pudding seems stuck to the mold, run a thin knife or spatula around the edges of the mold. Center a serving plate larger than the mold over the mold, then hold both tightly together and flip. The pudding should release onto the plate. If it hasn't, tap the mold a few times, then lift off the mold. Let the pudding cool to warm.
- While the pudding cools slightly, make the icing: In a medium bowl, combine the confectioners' sugar, butter, jelly, mace and rose water. Beat or whisk until smooth, then stir in the milk. If the icing is too thick to pour, add more milk by the tablespoon.
- While the pudding is still warm, coat it with the icing. If you have any icing leftover, serve alongside the pudding. Decorate the pudding using the crystalized rose petals if you'd like. Serve warm.
SAVORY ROSEMARY BREAD PUDDING
This is a very simple solution for the leftover bread and cheese from last night's party. Tossing the bread with olive oil before assembling the dish makes the top crunchy and very tasty--reminiscent of good, homemade croutons, which is exactly what it is.

- Preheat oven to 375 degrees F (190 degrees C).
- Heat olive oil in a cast iron pan, and cook onion and rosemary in oil until onion is soft.
- Toss bread cubes with olive oil and onions. Exact measurement of bread is not necessary. Place in a well oiled, deep sided, 9 inch square pan. Toss with 1/2 cheese, and sprinkle remaining cheese over the top.
- Beat together milk, cream, and eggs. Pour over bread in pan. It is fine that the bread sticks out of the custard.
- Bake for 1 hour, or until browned and a knife inserted in the middle comes out clean (except for melted cheese).

- Tear 500g white or wholemeal bread into a large mixing bowl and add 500g mixed dried fruit, 85g mixed peel and 1 ½ tbsp mixed spice.
- Pour in 600ml milk, then stir or scrunch through your fingers to mix everything well and completely break up the bread.
- Add 2 beaten large eggs, 140g light muscovado sugar and zest of 1 lemon, if using. Stir well, then set aside for 15 mins to soak.
- Heat oven to 180C/160C fan/gas 4. Butter and line the base of a 20cm non-stick square cake tin (not one with a loose base).
- Stir the melted butter into the pudding mixture, tip into the tin, then scatter with demerara.
- Bake for 1½ hrs until firm and golden, covering with foil if it starts to brown too much. Turn out of the tin and strip off the paper. Cut into squares and serve warm.

- BREAD PUDDING: In bowl combine eggs, cinnamon and nutmeg. Mix well. Add to this mixture sugar, milk, cream and vanilla extract. Mi well. - Heat oven to 140C/fan 120C/gas 1. Stir the custard together with the milk. Trim the crusts from the bread, cut into triangles, then place in a large bowl with the raisins or dried cherries.
