ROSEMARY-WHOLE WHEAT HAMBURGER BUNS
Found this recipe in a magazine a long time ago. Have been making them almost weekly ever since! I have made some alternate versions as well. They're easy, most of the time listed is rising time not actual working time. And they never fail to impress! You can also add 1 tsp. chopped garlic (or more!) and use olive oil instead of the butter but they seem to need a little extra flour for easier handling with the olive oil.

Steps:
- Place water, sugar and yeast in large bowl of a stand mixer wih paddle attachment. Let stand 2-3 minutes or until yeast is dissolved.
- Add milk, butter and 1 cup of the bread flour; beat at low speed until combined.
- Add salt and rosemary; beat until combined.
- With mixer running, slowly add whole wheat flour and enough of the bread flour to form a soft dough.
- Beat at medium-low speed 5 minutes or until smooth and elastic. (Can be made by hand. Knead 10 minutes if doing by hand).
- Place in a greased medium bowl, cover with plastic wrap and a towel. Let rise in a warm place until doubled in size.
- Gently punch down dough to deflate; place on a lightly floured surface. Divide into 6 pieces. Form each piece into a ball; place on a parchment paper lined baking sheet. Cover with towel; let stand 3 minutes. Flatten into 3 3/4" rounds. (should weigh about 4 ounces each) Cover with a towel; let rise another 15 minutes.
- At this point, you can place another light-weight cookie sheet on top of the buns to keep the buns flatter but I don't think it's necessary. Let them rise another 25 minutes or until almost doubled in size (dough should hold slight indentation when gently pressed).
- Preheat oven to 375 degrees. Lightly brush the tops of the buns with egg white; lightly press a rosemary sprig onto the center of each bun. Bake 20 minutes or until golden brown and bottoms sound hollow when gently tapped. Cool completely on wire rack.

Steps:
- In a large mixing bowl place all ingredients except flour and yeast.
- Mix, adding 4 cups whole wheat flour(or 2 cups white flour, 2 cups whole wheat, if desired)and 2 tbls. yeast.
- Whip with a wooden spoon 5 minutes. Slowly, add the rest of the flour. Turn out on a floured board and knead till smooth.
- Spray a large bowl with cooking spray and place dough in it. Put in a warm place to rise, covered with a towel, about 1 hour.
- When the dough has doubled in size, divide into 12 pieces. Roll into smooth balls. Flatten with the palm of your hand and place on a baking sheet.
- Let rise till doubled, about 45 minutes to an hour.
- Bake at 350*F. 20-25 minutes.
- Remove from oven. Cool on wire rack.

- In a large bowl, dissolve yeast in warm water; let stand 5 minutes. Add wheat flour, dry milk, sugar, salt, lemon juice, 3 tablespoons butter and 1 cup all-purpose flour. Beat until smooth. Add enough of the remaining all-purpose flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, about 10 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in warm place until doubled, about 1 hour. , Punch down dough. Shape into 14 buns, about 3-1/2 in. in diameter. Place on greased baking sheets; brush with 1 teaspoon of remaining butter. Cover and let rise until doubled, about 30 minutes. Bake at 375° for 14-16 minutes. Remove from baking sheets; brush with remaining butter. Cool on wire racks.

- In a small saucepan, combine the milk, water, butter, sugar, and salt in a saucepan. Bring to a simmer, then remove from the heat, and let it stand until it’s lukewarm (too hot and it will kill the yeast). If you have an instant read thermometer, you want to use it when it’s 110 degrees F.
- In a large bowl, whisk the flour and yeast together to combine. Pour the lukewarm wet ingredients from the saucepan into the flour, and stir until the dough starts to come together. If you have a stand mixer, use the dough hook to knead for 8 minutes. If not, knead the dough on a floured surface for 10 minutes (and resist adding too much flour. Adding more flour will make the bun more dense, and heavy). Place the dough in a large oil greased bowl, and toss the dough to coat. Cover with plastic wrap and let stand until it doubles in size (about 1 hour).
- Redistribute the yeast in the dough with your hands (try not to degas the dough too much) and divide into 12 portions. Make tight balls by pulling the dough out and around and pinching it on the bottom. Place them on two sheet pans lined with parchment paper, and flatten each ball with the palm of your hand until it’s about 3 or 4 inches wide (wet your hands first). Let the rolls rise until they have doubled in size, around 30 to 45 minutes. Make sure you give them the time to rise, or else they will be very dense.
- Preheat the oven to 400 degrees F. Beat the egg in a small bowl, and brush the tops of the rolls so they get an extra beautiful color on them in the oven. Sprinkle the tops with wheat germ. Bake for 16-18 minutes until they have browned on the top and bottom (they should be 200 degrees on an instant read thermometer). YAY homemade hamburger buns!!!

- Try tangzhong. Tangzhong is an Asian bread baking technique that involves cooking some of the flour and liquid in the recipe together before mixing up the dough.
- Substitute some whole wheat flour. If you’re looking to boost the flavor of your homemade burger buns, consider replacing half of the all-purpose flour with whole wheat flour.
- Make perfect-sized buns. Dividing the dough into individual buns is a critical point in any hamburger bun recipe. Shape your dough too small and your burger might fall out, or the bun might crumble.
- Use the right pan. You have options when it comes to pans for baking your homemade burger buns. If you want perfectly shaped buns, use our Hamburger Bun and Mini Pie Pan.
- Space the buns carefully. The way you arrange the dough in your pans will affect your final product. If you place the buns about 1” apart from each other, the edges of the buns will touch slightly after rising.
- Brush with an egg wash. After the burger buns are shaped and proofed (fully risen), egg wash the tops of the buns right before baking. This will make the buns shiny and deep golden brown, and will help your topping stick.
- Don’t steam the bottoms. The buns will come out of the oven looking beautiful and your kitchen will smell amazing — promise! Don’t get distracted by the tantalizing smell or the urge to take an Instagram picture before you remove the freshly baked buns from the pan.
- Slice just before using. Speaking of slicing — hold off on cutting your burger buns in half until as close to serving as possible. Burger buns will dry out quickly as soon as the interior crumb is exposed.
- Griddle leftovers with butter. End up with leftover buns? You just might have some extras if you use our Hamburger or Hotdog Buns recipe, since it produces a large batch of burger buns.
- Get ahead by freezing. This last tip is one you need to know if you like to plan (and bake) ahead. Homemade burger buns can be frozen at two points in the process to save some time later.
