RYE HAPPIES
This is an old recipe found on the back of a package of rye flour. They make a delicious bar cookie!

Steps:
- Mix first five ingredients together. Mix last four ingredients together and stir all into dry ingredients, mixing until just combined.
- Spread batter into well-greased 8x8 pan.
- Bake at 350F for 30 to 35 minutes.
- When cool enough to handle, but still warm, cut into bars. Sprinkle with powdered sugar, if desired.

SCANDINAVIAN ALMOND BARS
This has become a family favorite every year! If I don't make it my whole family teases me. I am sure that your family will love it too!

Steps:
- Preheat oven to 325°.
- Stir together flour, baking powder and salt.
- In a large bowl beat margarine or butter till softened.
- Add sugar and beat till fluffy.
- Add egg and the 1/2 teaspoon of almond extract and beat well.
- Add the flour mixture and beat till well mixed.
- Divide the dough into fourths, form each portion into a 12 inch roll.
- Place 2 of the rolls 4 to 5-inches apart on an ungreased cookie sheet.
- Flatten each roll till it is about 3 inches wide.
- Repeat with the remaining rolls.
- Brush each flattened roll with milk and sprinkle about 2 tablespoons of almonds each.
- Bake in a 325° oven for 12-14 minutes or till edges are lightly brown.
- While still warm, cut crosswise on the diagonal into 1 inch strips.
- Cool completely on a wire rack.
- Stir together the powdered sugar, the almond extract and enough of the 3-4 teaspoons of milk to make a drizzling consistency.
- Drizzle over the cool bars.

Steps:
- Melt butter in 9x13 baking dish or pan.
- Add as follows - DO NOT STIR:.
- Graham cracker crumbs, spread evenly over butter.
- Chocolate chips and butterscotch chips, spread evenly over crumbs.
- Coconut, spread evenly over chips.
- Nuts, spread evenly over coconut.
- Pour milk evenly over coconut.
- Bake for 25 minutes at 325 degrees in a glass pan or 350 degrees if using a metal pan.

- Preheat oven to 350°F. Oil the bottom and sides of a baking pan. The smallest you should use is 8 inches square, for thick bars, and the largest pan should be 9x13 inches, for flatter bars.
- In a bowl, beat the eggs lightly. Beat in the brown sugar, salt, oil, and vanilla. Then stir in the oats.
- Add the flour to the nuts and stir to coat the nuts with flour. Mix the nut-flour mixture into the batter.
- Spread in pan and bake about 25 to 45 minutes—less time with a larger pan, more with a smaller one—or until brown and set.
