SAGE POPCORN

Crisping sage in the microwave may sound a little unconventional, but it works great. The crumbled herb is sprinkled over freshly popped corn, adding an aromatic quality to the snack.

Steps:

  • Microwave sage in a single layer on a plate until crisp, about 2 1/2 minutes.
  • Meanwhile, heat vegetable oil in a large pot over medium-high heat. Add 3 popcorn kernels, and cover. Once kernels pop, add remaining kernels. Shake pot over heat, covered, until all kernels have popped, about 10 minutes.
  • Transfer popcorn to a bowl, drizzle with olive oil, and toss to coat. Crumble sage over top. Season with salt, and toss to combine.

1 1/4 cups fresh sage
2 tablespoons vegetable oil
1/2 cup popcorn kernels
Extra-virgin olive oil, for drizzling
Coarse salt

  • If popping on the stove: Heat 3 Tablespoons oil in a large pot (I used a 4 quart, 9″ Dutch Oven) over medium heat. If your pot is wider add an additional Tablespoon oil to prevent burning. The kernels shouldn’t be swimming in oil, but they should have a comfortable cushion of oil.
  • Add a few popcorn kernels to the oil then place a lid on top and wait for a kernel to pop. Add remaining kernels then place lid back on top and shake/slide pot over the burner every so often to prevent burning. Continue shaking/sliding every so often until popping slows then remove from heat and let remaining kernels pop. Pour popcorn into a large bowl.
  • NOTE: Grapeseed oil is a nearly flavorless oil and cannot be detected in the popped corn. You can just slightly taste the olive oil and can taste a hint of coconut if using unrefined coconut oil. The coconut flavor should be undetectable if you’re using refined coconut oil.

  • Brown Butter–Lemon Cook 6 tablespoons butter in a skillet over medium heat until browned, about 7 minutes. Remove from the heat and stir in 1 1/2 teaspoons grated lemon zest; drizzle over 16 cups hot popcorn.

  • Garlic-Herb Melt 4 tablespoons butter in a saucepan; add 4 grated garlic cloves and 1 teaspoon each finely chopped fresh rosemary, sage and thyme and cook1 minute.
  • Parmesan-Rosemary Toss 16 cups hot popcorn with 1/2 cup grated parmesan, 3 tablespoons olive oil, 1 tablespoon finely chopped fresh rosemary and 2 teaspoons kosher salt.
  • Frito Pie Toss 12 cups hot popcorn, 6 tablespoons melted butter, 4 cups Fritos (or other corn chips) and 2 tablespoons chili powder; spread on baking sheets.
  • Truffle Toss 16 cups hot popcorn with 6 tablespoons melted butter, 1 1/2 tablespoons truffle oil, 1/4 cup grated parmesan, 1 teaspoon kosher salt and 1/2 teaspoon pepper.
  • Movie Theater Melt 1 stick butter in a small saucepan over low heat, skimming off the foam and solids; drizzle over 16 cups hot popcorn and toss with 2 teaspoons kosher salt.
  • Veggie Pulse 2 cups each mixed veggie chips and dehydrated snap peas in a food processor until powdery; toss with 8 cups hot popcorn and 2 cups each veggie chips and dehydrated snap peas.
  • Three-Cheese Toss 16 cups hot popcorn with 2 cups shredded cheddar, 1 cup grated parmesan and 1/2 cup grated pecorino; spread on baking sheets. Bake at 350 degrees F until the cheddar melts, 3 minutes.
  • Gruyere-Porcini Pulse 1/2 cup dried porcini mushrooms in a spice grinder until powdery. Add 2 tablespoons chopped fresh parsley and 1 1/2 teaspoons kosher salt; pulse again until powdery.
