OPEN-FACE SALMON AND AVOCADO SANDWICHES

This is my version of smorrebrod, which is a Scandinavian open-faced sandwich, and translates to "buttered bread," so what's not to like? It can be topped with anything from cold cuts, pieces of meat or fish, cheese, spreads...all that good stuff. Mmm!

Steps:

  • Melt a thin layer of butter in a skillet over medium heat, then add the bread and toast on both sides until golden, 2 to 4 minutes per side. Combine the sour cream, preserved lemon and a few turns of pepper in a small bowl.
  • To assemble, dollop the preserved lemon sour cream all over the bread, then top with slices of avocado. Season the avocado with salt. Nestle in the slices of salmon, radishes and cornichons. Top with black pepper and crushed red pepper, if using. Sprinkle with the chives or dill and sesame seeds, then serve with the lemon wedges. Enjoy!

Unsalted butter, for cooking
Four 1-inch-thick slices rye bread
1/2 cup sour cream
2 tablespoons chopped preserved lemon
Freshly ground black pepper
2 avocados, sliced
Flaky salt or coarse kosher salt
4 ounces smoked salmon
2 radishes, thinly sliced
4 cornichons, sliced
Crushed red pepper, optional
Handful chopped fresh chives or dill
Sesame seeds (I like a mix of black and white sesame seeds), for sprinkling
Lemon wedges, for serving

BREADED PAN-FRIED SALMON

I love this recipe, it is absolutely delici-oso! These breaded pan-fried salmon fillets are best served with steamed rice and spring mix salad, or broccoli florets and mashed potatoes, or on a toasted roll for a sandwich.

Steps:

  • Preheat the oven to 400 degrees.
  • Place a baking rack on a sheet pan and lay the bacon on the rack. Roast for 15 to 20 minutes, until browned. Remove to a plate lined with paper towels.
  • Meanwhile, prepare the guacamole. Place the avocados, lime juice, scallions, red onion, jalapeno pepper, garlic, 1 teaspoon salt, and 1/2 teaspoon pepper in a mixing bowl and mash roughly together with a fork. Taste for seasoning; it should be very highly seasoned. Set aside.
  • When the bacon is done, heat a dry cast-iron skillet over high heat for 5 minutes. Pat the salmon fillets dry with paper towels, brush them all over -- top and bottom -- with olive oil, and sprinkle generously with salt and pepper. Place the fillets in the skillet skin side up and allow them to cook without disturbing them for 2 minutes exactly. With a metal spatula, carefully turn the fillets and cook for 2 more minutes. Transfer the skillet to the oven for 2 minutes (time it carefully!). Remove the salmon to a plate and cover it tightly with aluminum foil. Allow it to rest for 10 minutes.
  • While the salmon rests, cut the ciabatta rolls in half crosswise, place them cut side up on a sheet pan, and toast in the oven for 5 to 10 minutes, until lightly toasted.
  • To assemble the sandwiches, place the bottoms of the ciabatta rolls on a board and spread each with 2 rounded tablespoons of guacamole. Remove the skin from the salmon fillets, cut each fillet in half crosswise, and place both halves on top of the guacamole. Add 2 slices of bacon, a handful of arugula, and a sprinkling of salt. Spread another rounded tablespoon of guacamole on the underside of the top bread and place on top. Continue arranging all the sandwiches. Cut each sandwich in half diagonally and serve warm or at room temperature.

8 slices applewood-smoked bacon (8 ounces)
2 ripe avocados, seeded and peeled
1/4 cup freshly squeezed lime juice (2 limes)
4 scallions, white and green parts, chopped
1/4 cup minced red onion
1 tablespoon jalapeno pepper, seeded and minced
1 teaspoon minced garlic
Kosher salt and freshly ground black pepper
Four (6-ounce) salmon fillets, skin on
Good olive oil
4 individual ciabatta rolls
Baby arugula leaves

Steps:

  • Preheat the oven to 400 degrees F. Preheat a grill.
  • Rub the salmon fillets with oil and thyme. Season with salt and pepper. Grill the salmon until marked on both sides and medium doneness, about 2 to 3 minutes per side. Remove from the grill and set aside.
  • Cut the bread into 8 (1/2-inch thick) slices. Place the bread on a sheet pan and brush with olive oil. Place the bread in the oven and cook until lightly toasted, about 10 minutes.
  • Remove the ends from the cucumber and slice in half horizontally. Slice on a mandoline into 1/8-inch thick slices.
  • Spread the Salmon Remoulade on 2 slices of the toasted bread. Place the salmon on 1 slice of the bread. Top with a few slices of the cucumber and 2 slices of tomato. Toss the arugula with some of the House Dressing in a small bowl. Top the tomatoes with 1/4 of the arugula. Top with the other slice of bread and cut in half diagonally. Repeat with the remaining ingredients.
  • Place the lemon aioli in a food processor. Add capers, mustards, ketchup, tarragon, red onion, dill, chives, basil, and smoked salmon and pulse until well combined. Taste for seasoning.
  • In a food processor, combine the egg yolk, mustard, and roasted garlic and process. Add the lemon juice and pulse to combine. With the motor running, slowly add the oil until it is all added and the mixture is emulsified. Add the lemon zest and thyme and pulse to combine. Season with salt and pepper.
  • In a small bowl, whisk together the shallots and the mustard. Whisk in the vinegars and then the olive and vegetable oil. Season with salt and pepper, to taste. Transfer to a covered container and refrigerate until needed.

WHAT TO PUT IN A SALMON SANDWICH (38 EASY IDEAS)

Published May 27, 2022
  • Lettuce. Lettuce is one of those things that you think you don’t like until you try it and realize how much better your life would be if you ate more of it.
  • Tomato. Tomatoes are a classic because they’re delicious—and we all know that red equals love! They also add a nice tangy flavor to your sandwich that won’t overpower anything else on there (unless you want it too).
  • A Hard-Boiled Egg. Hard-boiled eggs are a great addition to your lunchtime meal because they’re easy to pack, they have a healthy dose of protein (and some healthy fats), and they’re super filling.
  • Mustard. Mustard is a great topping for salmon sandwiches because it adds flavor without overpowering the fish itself. You can experiment with different types of mustard—there are grainy ones that have a bit more texture when spread on bread, or smooth versions that are easier to spread evenly across your bread slices.
  • Mayonnaise (Or Miracle Whip) Thick and creamy mayonnaise can really make your sandwich shine, and you’ll need something to hold all those other ingredients together anyway!
  • Dill Pickles. Dill pickles are always a good addition to any sandwich because they bring their own flavor—but especially when paired with salmon. They’re tart and slightly sweet (the perfect balance for fish), and they give this sandwich a much-needed kick!
  • Bacon—And More Bacon! Bacon isn’t just for breakfast anymore—it can be used in so many different ways! Try adding some crispy strips on top of your salmon sandwich for an extra boost of flavor.
  • Cheese. Cheese is also a great thing to put on your salmon sandwich—but not just any cheese will do! There are certain guidelines that you should follow when selecting cheese for this particular sandwich.
  • Onion. Onions pair well with any meat or fish because they give the sandwich some extra sweetness without being overpowering—you can’t go wrong with red onions because they have more flavor than white onions but aren’t so sweet they’ll mess up your palate either!
  • Devilled Eggs. Devilled eggs are just as good on a salmon sandwich as they are on their own. The only difference is they take up more space on your plate!
