Steps:
- Make the sandwich: Put the deli meat on one slice of bread, spread the salsa over it, then sprinkle with a little cayenne (if using).
- Next put the cheese slice, then the other slice of bread, and spread with butter.
- Fry butter side down over medium heat, spread the top side with butter.
- Flip and fry until golden brown.
- Yummy with chips.

SALSA WRAPS (SANDWICH OR APPETIZER)
This is a wonderful twist on the generic cream cheese/ tortilla pinwheels that are served at lots of parties. You can slice these into pinwheels for an appetizer, or eat a whole tortilla as a sandwich. Green onions are another nice addition. I often leave out the ham and add more cheddar cheese-- either way, these are delicious!

- Combine cream cheese, sour cream, dressing mix, salsa and cheddar cheese in a medium sized bowl.
- Spread even amounts of this mixture onto tortillas, and top with a slice of ham.
- Roll tortillas and chill until serving time.
- If desired, cut into 1" slices before serving. If serving whole, a toothpick may be needed to keep the wrap together.

- Set oven control to broil. Between pieces of plastic wrap or waxed paper, place each chicken breast smooth side down; gently pound with flat side of meat mallet or rolling pin until about 1/4 inch thick.
- Place chicken on rack in broiler pan. Broil with tops 4 to 6 inches from heat 15 to 20 minutes, turning once (and adding buns, cut sides up, the last 3 to 4 minutes), until chicken is no longer pink in center and buns are lightly toasted.
- Spread bottom half of each bun with 1 tablespoon dip. Top each with chicken breast; spread with 1 tablespoon salsa. Top each with 2 tablespoons lettuce and top of bun.

- In a large bowl, whisk eggs, salt and pepper. Place a large nonstick skillet coated with cooking spray over medium-high heat. Pour in egg mixture; cook and stir until eggs are thickened and no liquid egg remains. Add 1/2 cup salsa and cheese; stir gently until cheese is melted., Spread cut sides of English muffins with cream cheese and remaining salsa. Top with scrambled eggs and avocado. BASIL SPREAD FOR SANDWICHES
This basil spread is great on sandwiches instead of using plain mayo. The Wholefoods market I go to uses it on some of their sandwiches but I have not made it myself. The recipe comes from their "American Summer Style" recipe booklet. In the booklet it is used on their grilled veggie sandwich but I have had it on their salmon sandwich among many others and it is very good.
