SANTA FE CORNBREAD

This is a family favorite that my grandmother clipped from a newspaper years ago. I add more jalapeno than the recipe calls for because I like it spicy. Also, I use pickled jalapenos rather than fresh because they give more flavor. This is definitely a better the next day dish. Trust me!

Santa Fe Cornbread image

Steps:

  • Heat oven to 400.
  • Grease 13x9x2 inch pan.
  • In large bowl,combine all ingredients, mix well. Spread in pan.
  • Bake at 400 for 30-40 minutes or until toothpick comes out clean and top is golden brown.
  • 16-18 servings.

3 (8 ounce) packages cornbread mix (I use Jiffy)
1 teaspoon salt
1 cup chopped green onion
3 tablespoons chopped fresh cilantro
1 cup sour cream
3 tablespoons jalapenos (chopped)
1 cup cottage cheese
3/4 cup butter
4 eggs
4 ounces shredded cheddar cheese
1 (16 ounce) package corn mixed with chopped peppers (red and green)

Santa Fe Cornmeal Pizza image

Steps:

  • In a small bowl, combine the cornmeal and 2/3 cup water. In a large saucepan, bring the remaining water to a boil. Gradually whisk in the cornmeal mixture; cook and stir until thickened. Stir in 2 tablespoons Parmesan cheese. When cool enough to handle, pat into a greased 12-in. pizza pan. Bake at 375° for 15 minutes or until lightly browned. Cool slightly., Meanwhile, in a large skillet, saute the onion, green pepper and garlic in oil until tender. Add the tomato sauce, mushrooms, basil, oregano and pepper. Cover and cook for 5 minutes. Add the beans. , Sprinkle 1/2 cup mozzarella and 2 tablespoons Parmesan cheese over crust. Top with the bean mixture and remaining cheeses. Sprinkle with olives. Bake at 375° for 15-20 minutes or until cheese is melted.

Can green chilies 1 egg, beaten Combine dry ingredients. Add remaining ingredients. Bake 35 to 40 minutes in 400 degrees.

  • In a 10-inch cast iron skillet, heat the oil over medium-high heat until melted. Swirl the oil around the skillet to coat the bottom and sides and then pour the melted oil in a big bowl or the bowl of your stand mixer. Place the skillet back on the stove over low heat.
  • Using your stand mixer or a handheld mixer, add the almond milk, honey and vinegar to the bowl with the melted oil and mix on medium speed for 30 seconds. Add the eggs individually, beating well after each addition. Add the dry ingredients (almond flour, coconut flour, baking powder, baking soda and salt) and mix until combined. Pour the batter into the hot cast-iron skillet.
  • Bake for 30 minutes, or until the bread is golden and a toothpick inserted into the center of the bread comes out clean. If desired, put the oven on broil and let the top get super golden.
