Steps:
- In a bread machine pan, place the water, butter, egg, sugar, salt, seasonings, flour and yeast in order suggested by manufacturer. Select dough setting(check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed)., When cycle is complete, turn dough onto a lightly floured surface. Divide dough into 16 portions; shape each into a ball. Place 2 in. apart on greased baking sheets. Cover and let rise in a warm place until doubled, about 30 minutes., Bake at 375° for 12-15 minutes or until golden brown. Brush with butter and sprinkle with coarse salt if desired. Remove from pans to wire racks.

In this sassy twist on a classic sausage roll, the Australian chef Paul Allam of Bourke Street Bakery riffs on North African flavors to create something fragrant, rich and generously spiced. Harissa pastes can vary widely in heat content; Mr. Allam uses a moderately hot homemade paste in his recipe. If your harissa is especially potent, consider using half the amount called for here.

- Heat oven to 400 degrees and line a rimmed baking sheet with parchment paper.
- Place almonds on baking sheet and roast until lightly golden, about 5 minutes. Pour almonds onto a cutting board to cool slightly. (Reserve baking sheet and parchment.) Coarsely chop almonds and place in large mixing bowl. Lower oven temperature to 375 degrees.
- In a large skillet, heat olive oil over medium. Add onion and sauté until tender, about 5 minutes. Add roasted red peppers, harissa and ¼ teaspoon salt and cook for another 2 minutes. Transfer onion mixture to the bowl with the almonds and let cool.
- Add ground lamb, couscous, currants, pepper and the remaining salt to almonds. Using your hands, mix thoroughly until well combined.
- Roll the chilled puff pastry dough to about 1/8-inch thick. Cut pastry into 4 equal rectangles. In the center of each pastry, dollop a quarter of the lamb mixture, then form it into a long sausage running lengthwise on the pastry strip. Lightly brush one long edge of the pastry with egg wash. Starting with the side without the egg wash, firmly fold the pastry over the meat filling to form long rolls, pinching to seal. Place on prepared baking sheet, seam-sides down.
- Lightly brush the top of each roll with egg wash and sprinkle with poppy seeds, if using. Bake until sausage rolls are golden brown, about 35 to 40 minutes. Serve warm or at room temperature.
GARLIC HERB PEPPERONI BREAD (BREAD MACHINE)
This recipe smells great baking and is great toasted with butter or cheese. Kids love it! Makes 1.5 lb. loaf. Cook time listed includes dough prep and rise time.

Steps:
- Place the ingredients in the bread machine pan in the order listed or as recommended by your machine's manufacturer.
- You can adjust the garlic and onion to your preference.
- Don't let the salt touch the yeast.
- At this point you can either select White Bread and press Start to complete in the bread machine, or use the dough setting and finish in the oven.
- I prefer the oven method as it seems to result in a higher loaf with better texture.
- Directions for oven method: Select dough cycle and press start.
- When complete, turn the dough out onto a floured surface and punch down.
- Flatten out into a rectangle, patting to get out bubbles.
- Roll tightly into a log, turn seam side down, and tuck the ends under.
- Place into a loaf pan that has been lightly greased with olive oil, loosely cover with plastic wrap sprayed with nonstick spray, and let rise in a warm place for 45 minutes or until doubled.
- Bake in a preheated 350 degree oven for 30 minutes or until done (if the bottom of the loaf sounds hollow when tapped, it's done).
- Immediately remove from loaf pan and cool on a wire rack at least 10-15 minutes before slicing.

- Place water, butter, egg, 3 cups flour blend, sugar, salt and yeast in bread machine pan in order recommended by the manufacturer. Select Dough/Manual cycle. - Combine all dough ingredients in your bread machine.
- Use your dough cycle to prepare the dough and allow it to rise in the machine.
- After it's done in the bread machine turn the dough out onto your floured board and knead more flour into it until it is no longer sticky and it's smooth and elastic (takes me about 1/2 cup more and about 5 minutes) and easy to handle.
- Pat it out into a big rectangle the size of your bread board (or cookie sheet) and until it's about 1/2ö thick.
- Spread these ingredients over the middle third dough.
- Start with pizza or spaghetti sauce, then half the shredded mozzarella.
- Pile on onion, bell pepper, zucchini, olives, then tomatoes.
- Sprinkle garlic, herbs and salt over tomatoes.
- Put the parmesan and the remaining cheese on the mound.
- Gently stretch one side up and over the top of the filling then the other side on top of that.
- Pinch the ends closed.
- Gently transfer, seam side down, to a large cookie sheet that you have sprayed with Pam.
- Cover and let rise for 30 minutes.
- Brush the top lightly with olive oil and bake 350 oven for 30-45 minutes until golden brown.
- Allow to cool slightly before cutting.

These are the BEST dinner rolls I've ever made. They also make great buns for sandwiches. For a festive presentation, sprinkle with poppy or sesame seeds before baking.

- Place the bread flour, sugar, salt, milk powder, water, butter, and yeast in the pan of the bread machine in the order recommended by the manufacturer. Set on Dough cycle; press Start.

- Melt butter in a small skillet and saute onions, garlic and herbs over medium/low heat until onions are soft. Pour into bread machine.
- Add water, salt, sugar and bread flour. Add yeast last so it does not contact hot butter. (However, adding all the other ingredients should have cooled the butter/spice mixture down by the time you get to the yeast.)
- Select the dough cycle. After about 10 minutes, lift the lid and check the dough. If too wet, add flour one tablespoon at a time. If too dry, add one tablespoon of water. Dough should stick to sides and then pull away cleanly.
- At the end of the dough cycle, remove the dough from your bread machine pan onto a floured surface.
