BEST TURKEY MEATLOAF
Looking for a healthy version of everyone's favorite comfort food? Try this recipe for turkey meatloaf, which is delicious on its own or served in between bread for a sandwich. Panko breadcrumbs add texture and sage, parsley, and Dijon mustard add flavor.

- Preheat oven to 350 degrees.
- Place panko and milk in a large bowl; stir until well combined. Let stand 5 minutes.
- Add turkey, onions, eggs, 1/4 cup ketchup, parsley, mustard, salt, sage, and pepper to breadcrumb mixture. Gently mix until well combined. Transfer mixture to a 9 3/4-inch-by-5 3/4-inch loaf pan. Brush top with remaining 2 tablespoons ketchup.
- Transfer meatloaf to oven and bake, draining any accumulated juices as necessary, until it reaches 165 degrees on an instant-read thermometer, 1 1/2 to 1 3/4 hours. Serve immediately or use to prepare sandwiches.

- Preheat the oven to 425 degrees F. Line a baking sheet with foil.
- Heat the olive oil in a large skillet over medium heat. Add the onions, thyme, sage, 1 teaspoon salt and 1/2 teaspoon pepper. Cook, stirring often, until the onions are softened, about 10 minutes. Add the garlic and cook 1 minute more. Add the tomato paste and cook for 1 minute, stirring to incorporate. Stir in the Worcestershire. Remove from the heat and allow to cool.
- Add the panko to a large mixing bowl and pour over the chicken broth so the breadcrumbs soak up the liquid. Add the turkey, eggs, 2 teaspoons salt, 1/2 teaspoon pepper and the cooled onion mixture and mix well with your hands until well combined. Form the mixture into a 10-by-5-inch loaf on the foil-lined baking sheet. Coat the top and sides with the ketchup.
- Put the meatloaf in the oven and reduce the oven temperature to 350 degrees F. Bake until a thermometer inserted in the center of the loaf reads 165 degrees F, 45 minutes to 1 hour. Let cool slightly before slicing and serving.
BEST TURKEY MEATLOAF
After much trial and error trying to make a more healthy meatloaf, I came up with this recipe. It is important to make this on a baking sheet so the liquids can be drained off the meatloaf. Also, do not put the topping on before the meatloaf has cooked for 30 minutes. Turkey creates a lot of juices, so if you put the topping on first it will become watery and runny.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a jelly roll pan.
- Mix ground turkey, buttery round cracker crumbs, milk, onion, egg, salt, garlic, and black pepper in a bowl; shape into a loaf and place on the prepared jelly roll pan.
- Mix ketchup, brown sugar, and Worcestershire sauce in a separate bowl; set aside.

- Preheat oven to 325F.
- Saute onions in olive oil until translucent, about 15 minutes.
- Add salt, pepper, thyme, Worcestershire sauce, chicken stock and tomato paste and mix well.
- Allow to cool to room temperature.
- Combine ground turkey, bread crumbs, egg and onion mixture in a large bowl.
- Mix wll and shape into a rectangular loaf on an ungreased sheet pan.
- Spread the ketchup evenly on top.

- Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.
- Mix tomato sauce, tomato paste, ketchup, sugar, onion powder, garlic powder, 1 teaspoon oregano, 1 teaspoon black pepper, and 1 teaspoon Worcestershire sauce in a bowl.
- Place stewed tomatoes in a large bowl; crush tomatoes using a fork. Add turkey, crushed crackers, onion, green bell pepper, eggs, 1 tablespoon oregano, thyme, 2 tablespoons Worcestershire sauce, garlic, and 2 teaspoons black pepper; mix until evenly combined. MOM'S BEST EVER TURKEY MEATLOAF
This recipe was modified from one I found in a cookbook published by "The Turkey Store". My family, and everyone I have ever served it too love it and can't believe that it is low fat, low cholesterol. And recently I started substituting oatmeal for bread crumbs since my husband's doctor put him on an even stricter diet than before. It is easy, there is no need to sauté the onions, bell pepper and garlic before mixing with the rest of the ingredients. It is also moist and very tasty. I usually serve with baked sweet potatoes and fresh green beans. It makes GREAT sandwiches the next day.

- Spray 9 x 5 loaf pan with cooking spray.
- Combine all ingredients except tomato sauce and 1 tbsp Worcestershire in large bowl and mix well.
- Add more egg if too dry, or add more oatmeal crumbs if too wet.
- Press turkey mixture into pan.
- Bake at 375°F for 45 minutes.
- Mix tomato sauce and remaining 1 tablespoon Worcestershire together in small bowl.
- Remove meatloaf from oven and pour tomato sauce mixture over meatloaf.
- Return to oven for an additional 15- 20 minutes.
- If using 99% Fat Free ground turkey breast meat, there is no need to drain fat before pouring tomato sauce on and returning to oven.
- If you use the regular ground turkey, which is about 7% fat you might want to drain the fat off before pouring the tomato sauce on the loaf.
MOZZARELLA-STUFFED TURKEY MEATLOAF RECIPE BY TASTY

- Preheat the oven to 375˚F (190˚C).
- Make the sauce: In a medium bowl, stir together the tomato sauce, apple cider vinegar, and honey. Set aside.
- Make the meatloaf: In a large bowl, combine the ground turkey, zucchini, onion, garlic, egg, Dijon mustard, honey, 2 tablespoons of the tomato sauce, bread crumbs, salt, pepper, oregano, basil, and parsley. Mix well.
- Add half of the meatloaf mixture to a greased loaf pan and flatten to form an even layer.
- Layer the cheese over the meatloaf layer. Top with the rest of the meatloaf and smooth the top.
- Top the meatloaf with half of the tomato sauce mixture, using a spoon or rubber spatula to spread evenly. Reserve the rest of the tomato sauce.
- Bake the meatloaf for 1 hour, or until the internal temperature reads 160˚F (70˚C) when tested with a meat thermometer.
- When the meatloaf is cooked through, warm the reserved tomato sauce in the microwave or a skillet, then drizzle on top of the meatloaf.
- Garnish with fresh parsley and serve with your favorite sides. (We used mashed sweet potatoes and asparagus.)

SARASOTA'S BEST TURKEY MEATLOAF
It is just a favorite of mine. A have a few other meatloaf recipes made with turkey, but this is by far my favorite. Well worth it. Serve with the standards with a twist. For baked or mashed potatoes - try mashed cauliflower, or mashed parsnips which are really good. And peas or green beans for me, but try some balsamic beans or creamed peas with parmesan. In fact I have some ground turkey and need to use it up, so it may just be dinner later this week. By all means if you prefer the tomato based sauce, that is fine. I just like this for a change.

- Bread -- soak the slices of bread in the milk and then squeeze the milk out. Crumble and break it up and add to a large bowl.
- Meatloaf -- Then to that same bowl add all the other ingredients, except for the turkey and the ingredients for the topping and mix well to combine. Then add in the turkey and mix being careful to over mix. Over mixing can make tough meatloaf.
- Bake -- I like to use a baking sheet and free form my meatloaf but you could certainly use a loaf pan. I line a baking sheet and than form the meatloaf in a loaf type of shape. Bake in a 375 degree oven for about 45-50 minutes until done. It really depends on how thick or what type of pan you cook the loaf inches.
- Sauce -- Mix the BBQ sauce, marmalade, and scallions and spoon or brush on the top of the loaf after the meatloaf is cooked half way. Then brush on again in another 10-15 minutes. And then right at end if you have any sauce left, brush or spoon on the remaining sauce and cook just another couple of minutes before finishing.
- Serve -- Let set 5 minutes before slicing.
- Don't forget you can always use a traditional tomato sauce or ketchup topping if you prefer, but I love this for a twist. Enjoy!
