RETRO SCHOOL CAFETERIA PEANUT BUTTER BARS
It's taken me a while to find this recipe. There are many versions of "the peanut butter bar" but, I believe this recipe comes the closest to what I remember eating in the 1960's (via our elementary school lunchroom). Boy those ladies could really cook back then!

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Grease a 15x10-inch baking pan.
- Cream white sugar, brown sugar, butter, and eggs together in a mixing bowl. Mix in peanut butter and vanilla extract. Add flour and blend well. Add oats, baking soda, and salt and mix to combine. Spread into the prepared pan.
- Bake in the preheated oven until golden and the edges start to pull away from the sides of the pan, about 20 minutes. Remove from the oven and let cool or chill in the refrigerator, about 30 minutes.
- While bars cool, blend powdered sugar, butter, milk, and peanut butter together in a bowl, adding more milk to give frosting the desired consistency. Frost cooled bars and cut into 20 pieces.

Steps:
- 1. Place Peanut Butter, Confectioners Sugar, Brown Sugar, Graham crackers and Butter into a microwave safe bowl and heat until melted (check in 45 seconds) about 1 to 2 minutes no more than that.
- 2. Stir with spoon at first it will look like a mess, but after several Stirs it will all come together and will leave sides of bowl.
- 3. Transfer peanut butter mixture into a 9x13 pan and pat it into the pan with your hands.
- 4. Let cool in fridge. Cut into squares.
CAFETERIA PEANUT BUTTER BARS
These were the peanut butter bars that our school cafeteria used to sell for 25 cents a bar. I am sure they had to make multiple pans a day, these were so good! Very easy to make and really tasty! No baking required. Prep time does not include refrigeration time.

Steps:
- 1. Mix the sifted powdered sugar, brown sugar and melted butter together well. Fold in the creamy peanut butter until blended.
- 2. Spread the peanut butter mixture into a buttered pan; 9x13 for thicker bars, cookie sheet for thinner bars.
- 3. Melt the chocolate chips and 1/2 cup butter and pour over the peanut butter mixture. Spread around to make it even.
- 4. Refrigerate for 1 hour, until chocolate has solidified most of the way, and cut into bars with an unserrated knife.
- 5. Return to the refrigerator over night until set. (I return to the freezer for faster set time).

- Combine flour, baking soda, and salt and set aside.
- Cream together the butter, peanut butter, granulated sugar, brown sugar, and vanilla in a large bowl.
- Beat in egg.
- Gradually beat in flour mixture.
- (If you'd like, you can add 2 cups of semi-sweet chocolate chips to the mixture, but I know*my* school could never afford such luxuries as chocolate!) Spread batter into a 13x9x2 inch pan.
- Bake at 375F for 15 to 18 minutes.
- (If you'd like to go the extra mile past what your school could probably afford to make for your lunches, you can take 1 cup of milk chocolate chips and put them on the surface of the peanut butter bars just after you've removed them from the oven. The bar) Let the bars it cool in the pan on a rack then cut into bars.
- Enjoy!
- Note: reduced fat peanut butter for this recipe is not recommended, as it might make the bars drier than you'd like.

THE REAL CAFETERIA PEANUT BUTTER BARS
These are exactly like the ones I grew up with in the 80's! You can half the recipe and use a 9x13; I like to make a bunch and either freeze them or gobble them. (I have five kids...they usually get gobbled! ;) Sometimes I leave off the chocolate chip layer, put the PB frosting directly on top of the bars, and smother with Texas sheet cake icing instead. YUM!

- Preheat oven to 350 degrees.
- Cream butter and white sugar and brown sugar. Blend in peanut butter, eggs, vanilla, and baking soda. Add flour and oatmeal. Mix well.
- Spread batter in greased 15"x10"x1" pan. Bake for 20 minutes.
- Remove pan from oven turn the oven off. Sprinkle chocolate chips over the top of bars. Return to oven and allow to sit for 8 minutes or until chocolate is melted. Spread to smooth chocolate, and allow to cool.
- To make the peanut butter icing: Mix together powdered sugar, remaining peanut butter, and milk until it makes a spreadable consistency. Cover the bars and enjoy!

- Preheat oven to 350 degrees F.
- In a large bowl, cream together butter, sugar and brown sugar together.
- Add vanilla, eggs, and 1 cup of the peanut butter; stir to combine.
- Add oats, flour, baking soda and salt and mix until well combined.
- Spray a baking sheet (half sheet jelly roll pan that is approximately 17.8 x 12.8 x 1 inch) with nonstick cooking spray and spread out dough in an even layer.
- Bake for 15 minutes and remove from oven.
- Drop remaining peanut butter (about 1 1/2 cups) by very small spoonfuls (we use a baby spoon) all over on top of warm bars. Let set for about 5-6 minutes and gently spread when peanut butter has begun to melt. It will spread easily when the peanut butter has softened on the warm bars. Don't try to spread it while still thick.
- Then let the bars cool until peanut butter has set up.
- While cooling, mix together frosting ingredients with a hand mixer until smooth and spread on top of bars.
- Cut into bars and serve.

- In a medium bowl, mix together the melted butter, graham cracker crumbs, powdered sugar, and 1 cup peanut butter until well blended.
- Press evenly into the bottom of an ungreased 9 × 13 inch pan. (I did mine in a 9 X 9 inch square pan because I wanted them to be thicker)
- In the microwave, melt the chocolate chips with the peanut butter, stirring every 30 seconds until melted until smooth. Spread over the peanut butter layer.
- Refrigerate for at least one hour before cutting into squares.

- In a large bowl, in batches, cream the sugars, peanut butter and shortening until light and fluffy. Beat in the eggs and vanilla. Combine the flour, baking powder and salt; gradually add to creamed mixture and mix well. , Press into three greased 15x10x1-in. baking pans.
