SEAFOOD AND SPINACH PASTA BAKE
Credit for the inspiration for this one goes to Vicki in CT's Recipe #223201 but I completely revamped almost everything but the baking time. I still mean to make hers someday, but this is what I had on-hand and it came out so good I had to post it.

Steps:
- Melt butter over low heat; whisk in flour until smooth.
- Cook over low heat, stirring constantly, until bubbling.
- Whisk in milk and broth; increase heat to medium and heat, stirring frequently, until bubbling. Continue to cook, stirring constantly, one minute.
- Stir in onion, garlic, cheese and basil; cook, stirring constantly, over low heat until cheese is melted.
- Spread 1/3 of cheese mixture into the bottom of a 9x13-inch glass pan.
- Layer half of the penne, all of the cottage cheese, and half of the crab and lobster over the sauce.
- Pour another 1/3 of cheese mixture over seafood.
- Layer remaining half of the penne, the spinach (should still be wet), and the remaining seafood; then top with remaining sauce.
- Sprinkle with freshly grated parmesan.
- Bake at 350F for 45 minutes; let stand 15 minutes before serving.

GARLIC SHRIMP PASTA BAKE

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.
- Heat 1 tablespoon butter and vegetable oil large oven-safe skillet over medium heat. Add garlic; cook until fragrant, about 30 seconds. Add shrimp, 2 tablespoons parsley, and dill. Cook and stir, flipping shrimp halfway, until pink, 3 to 4 minutes. Move shrimp to a plate and set aside.
- Melt the remaining 2 tablespoons butter in the skillet, stirring into the shrimp juices. Add flour; whisk until fully combined and starting to turn golden, 30 seconds to 1 minute. Add chicken broth and milk in that order; whisk to combine. Stir in tomatoes, lemon juice, salt, and pepper. Bring sauce to a simmer.
- Stir 1/2 cup Parmesan cheese and Romano cheese into the sauce until cheeses begin to melt and sauce is creamy. Add 1 tablespoon mozzarella cheese. Mix in about 1/2 the cooked penne to start; add more if there is enough sauce to coat. Add the shrimp and stir to combine. Top with the remaining parsley, Parmesan, and mozzarella.
- Bake in the preheated oven and bake until top is golden and sauce bubbles around the edges of the skillet, 8 to 10 minutes.

- Preheat the oven to 200°F In a slow cooker, combine the chicken broth, spinach, garlic, and olive oil. Cook for 2 hours over low heat or until the spinach wilts. Meanwhile, cook the pasta according to the package directions. Then add it to the crock pot. Cook for an additional 30 minutes. Stir the ingredients. Rub the salmon with brown sugar. Place the meat in a lightly greased pan and bake for 20 to 30 minutes. Let it cool for 10 minutes. Then chop the salmon into 1-inch pieces. Transfer the salmon pieces to the crock pot. Mix the ingredients well. Cook on low for another hour before serving.
