Steps:

  • Whisk together the ginger, lime juice, fish sauce, sugar, salt and pepper in a bowl until the sugar has dissolved. Slowly whisk in olive oil until incorporated. Set aside and refrigerate half of this mixture to be used as a salad dressing later. Whisk the garlic, lime zest, minced chile pepper, and cilantro stems into the marinade. Coat the tuna steaks with the marinade, cover, and let stand for 1 hour at room temperature.
  • Preheat a large, heavy-bottomed skillet over medium-high heat. Once the skillet is very hot, remove the tuna from the marinade, and place into the skillet. Sear the tuna until golden brown on both sides, and cooked to your desired degree of doneness, about 2 minutes per side for medium, depending on thickness.
  • Place the watercress in a large bowl with the cilantro leaves, cherry tomatoes, and sliced chile pepper. Pour in the reserved dressing, and toss to mix. Serve the seared tuna on a bed of salad.

SEARED AHI WITH CILANTRO GINGER DRIZZLE

Oh so easy, and a beautiful presentation when using sushi-grade ahi. The sauce is versatile, and you can fine tune to your liking. Sometimes I add sesame oil, sometimes I use lemongrass paste (from the produce aisle) instead of ginger. And if I want it extra spicy, I use red Thai chilies. Make it your own!

Steps:

  • 1. In a small bowl, combine all the sauce ingredients and set aside.
  • 2. Season the ahi with salt and pepper. Put about 1 1/2 tablespoons of olive oil in a skillet over medium heat. Oil should coat the surface. Heat till shimmering, then add the ahi. Let sear for about one minute per side - just enough to form a nice crust. Add about half the sauce to the pan and shake to distribute. Remove from heat.
  • 3. Place the ahi on a cutting board and let sit for about 3 minutes to firm up. Meanwhile, peel and slice the avocado. Then slice the ahi on the diagonal.
  • 4. To serve, arrange the ahi slices nicely on the plate, top with some avocado slices, and drizzle each portion with the remaining sauce. Serve immediately or the avocado will brown.

SAUCE/DRIZZLE:
1/2 c fresh cilantro, minced
2 clove garlic, minced
1 inch piece of ginger, grated or very finely minced
1 serrano chili, finely minced (to taste)
1 Tbsp tamari or soy sauce
1 large lime, juice of
1 1/2 Tbsp olive oil, plus more for coating pan
FOR THE AHI:
2 ahi fillets, sushi grade (6 oz each)
1 firm-ripe avocado, halved and sliced

  • In a small bowl, whisk together the fresh lime juice, soy sauce and sesame oil. Pour the mixture into a large resealable plastic bag. Add the ginger slices.
  • Season the ahi tuna steaks with pepper, transfer to the bag and seal the bag and marinate for 15 minutes. Take care not to marinate for any longer, otherwise the fish will start to "cook" in the marinade.
  • Heat a nonstick skillet, cast iron skillet or grill pan over medium-high heat. Sear the fish until the desired degree of doneness is reached, about 2 minutes per side.
