SEVEN UP BISCUITS (7-UP BISCUITS)

These were the lightest and fluffiest biscuits I've made in a long time. I had to create my own 7-Up because we didn't have any. I used a cup of club soda, 2 tbsp of sugar, and 1 tsp each of lemon and lime juice. The results were spot on! I sure hope you try this biscuit recipe, if you like soft, tall biscuits. I tried this...

Seven Up Biscuits (7-Up biscuits) image

Steps:

  • 1. Preheat oven to 425°. Stir together the club soda, sugar, and lemon and lime juices until blended (or just measure 1 cup 7-Up).
  • 2. In a large mixing bowl, stir together the Bisquick, sour cream, and club soda mixture (or 7-Up). Dough will be very soft, that's OK. Turn out onto a flat surface which has been liberally sprinkled with about 1/3 cup more Bisquick.
  • 3. Knead dough lightly just a few times until extra Bisquick is worked in. Work in more Bisquick if necessary, but don't let the dough get stiff or dry. I use a pastry cloth for this step, but whatever surface you normally use for biscuits should work fine. Pat out (don't roll) to about 1/2" thick.
  • 4. Place the melted butter in the bottom of a 9x13" cake pan. Using a 2 1/2-inch cutter, cut biscuits and place them in the melted butter. Keep them close together, sides touching. It will be a tight fit. You will have to lightly re-knead your scraps after cutting until all the dough is used up.
  • 5. Bake the biscuits about 14-17 minutes, until nicely browned. Watch them carefully so the tops don't get too brown. When done, use a fork to separate the biscuits from each other. *Note* I made only a half-recipe the first time, and it worked great, too. I got 1 dozen 2 1/2-inch biscuits.

4 c bisquick mix
1 c sour cream
1 c club soda
2 Tbsp sugar
1 tsp each lemon and lime juice
*or* for the above, just substitute 1 cup 7-up soda
1/2 c butter, melted

Steps:

  • 1. Mix bisquick, sour cream and 7 up. Dough will be very soft - don't worry.
  • 2. Knead and fold dough until coated with your baking mix.
  • 3. Pat dough out and cut biscuits using a round biscuit / cookie cutter.
  • 4. Melt butter in bottom of cookie sheet pan or 9x13 casserole dish.
  • 5. Place biscuits on top of melted butter and bake for 12-15 minutes or until brown at 425 degrees.

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease a large baking sheet.
  • Whisk baking mix, lemon-lime soda, sour cream, and melted butter in a bowl until batter is smooth. Drop biscuits by large spoonful onto the prepared baking sheet.
  • Bake in the preheated oven until biscuits are golden brown, 12 to 15 minutes. Let biscuits rest for about 5 minutes before serving.

Easy 7-Up® Biscuits image

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Put butter in a 9x13-inch baking dish and place dish in the preheating oven until butter is melted.
  • Mix baking mix, lemon-lime soda, and sour cream together in a bowl until dough holds together and is sticky. Turn dough onto a floured work surface and roll into 1-inch thick circle. Cut circles out of dough using a cookie cutter or the rim of a wine glass and place in the melted butter.
  • Bake in the preheated oven until biscuits are golden brown, 10 to 12 minutes. Remove dish from oven and let stand until biscuits have absorbed all the butter.

Steps:

  • Preheat oven to 450 degrees.
  • Cut the sour cream into your biscuit mix. "Cutting in" is simply incorporating your sour cream, butter or shortening into your dry baking mix without using a mixer. You can use a fork, knife, pastry cutter or the tools God gave you, your fingers. You just want to make sure that each portion of your {wet} ingredient gets coated with the dry mix.
  • Stir in 1/2 cup 7 Up. The dough will be very soft, don't worry.
  • Sprinkle additional baking mix on to your counter, about a 1/2 cup seems to work just fine.
  • Knead and fold dough until coated with your baking mix. Pat dough out, (no rolling pin needed) and cut biscuits using a round biscuit/cookie cutter. Don't have one, no problem, you can certainly use a glass or empty soup can to cut out your biscuits. Where there's a will, there's a way! Improvising is fine.
  • Melt butter in a 9 inch square pan. I stick my pan and butter in the oven for a few minutes. Just a few though, the butter will burn, so watch it.
  • Place cut biscuits on top of melted butter and bake for 12-15 minutes or until brown.

2 cups baking mix (Jiffy or Bisquick)

1/2 cup 7-Up soda (any clear carbonated drink will work)
