SHERRIED SWEET POTATO SOUP
I stir up a pot of my smooth, spiced sweet potato soup when I want something out of the ordinary for guests. Using an immersion blender will result in a creamier texture.

Steps:
- Place sweet potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or just until tender. Drain; set aside., In a large saucepan, saute onion in butter until tender. Add the garlic, cumin, salt, ginger, coriander, cinnamon and cardamom; cook for 2 minutes. Stir in potatoes and broth; bring to a boil. Reduce heat; simmer, uncovered, for 25-30 minutes or until flavors are blended., Add cream and sherry; bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Remove from the heat; stir in lime juice. Cool slightly. In a blender, process soup in batches until smooth. Garnish with cilantro.

SHERRIED CHICKEN
This is a very good recipe that I found in Bon Appetit many, many years ago. It is a good family dinner, but is nice enough for company.

Steps:
- Lightly sprinkle chicken with seasoned salt and pepper, and brown on both sides in butter in Dutch oven over medium-high heat.
- Add sherry and liquid from mushrooms, cover, and bake at 350 degrees F for 30 minutes or until chicken is tender and cooked through.
- Remove chicken to serving dish.
- Measure pan juices and add water or broth as necessary to make 1-1/4 cups.
- Carefully blend liquid and chicken gravy mix in Dutch oven.
- Bring to a boil, reduce heat, and simmer uncovered for 5 minutes or until thickened, stirring constantly.
- Blend in sour cream, and add mushrooms.
- Heat, but do not allow to boil!
- When sauce is smooth and hot, pour over chicken breasts.
- Serve with fluffy rice or mashed potatoes.
SHERRIED SWEET POTATOES
Sort of a pudding-like side dish. It takes about 5 medium sweet potatoes to equal 4 cups. If you use cooking sherry, omit the salt. If you want to get fancy, you can sprinkle the top with sliced almonds or finely chopped pecans during the last 5 minutes of baking. The preparation time does not include the time to initially cook the sweet potatoes--I do this in batches in the microwave, but have found the time to vary quite a bit depending on the microwave (my current one works much faster than my former one). I microwave them just until they're soft enough to mash.

- Turn into a buttered 1½ quart casserole and bake at 375° 45 minutes.

SKILLET CREAM POTATOES
Another from Fannie Farmer (1965). Do you sense that I'm getting rid of that tattered volume and saving the best of it here? Fannie suggests cooking and serving this in an electric skillet which can go "on the buffet for a party." I like to use lo-fat or non-fat evaporated milk in place of milk or cream for most creamed dishes and cream sauces.

- Peel potatoes and dice into a skillet.
- Add boiling water and salt.
- Cover and cook 10 minutes, or until potatoes are tender.
- Uncover and simmer until water has almost evaporated.
- Add milk or cream.
- Season to taste. Cook until slightly thickened, stirring gently with a fork.
- Sprinkle with chopped parsley.
MY CREAM POTATOES
I love good cream potatoes. I learned how to make this from my Great Aunt Minnie. She always had a bowl on the table at meals. **NOTE** When I don't have fat back meat, I use a chicken bouillon cube in the water while boiling taters. You can use regular potatoes to replace red potatoes.

Steps:
- Wash and peel potatoes.
- Before adding potatoes to the pot, fry a 2-inch slice of fat back in the pot til browned.
- Leave grease in pot and remove strip and discard (or put 1 cube chicken bouillon in the water while cooking).
- Add potatoes and water to grease in the pot and bring to a boil.
- Cook 20 minutes or until tender.
- Drain potatoes.
- Put potatoes in a mixer bowl and add milk, whipping cream, salt, pepper and butter and cream to texture you prefer (use more or less milk if needed).
