SHOLAY??

Pretty much a throw together East Indian recipe that I got from my husband's idea of what it had in it and what it should taste like. I'm not sure if it's the real thing but I know it's cheap, easy and they gobble it up.

Steps:

  • Pour the whole can of chick peas, liquid and all into a medium sized pot. Add thinnly chopped onion, yes the whole thing. Sometime I will add cubed meat (that has already been browned) or leave it as a vegetarian dish and add extras like bell peppers (not green).
  • Add and mix in a tablespoon of curry paste (hot, med or mild). Simmer for about twenty minutes (time to get homework started and helped with).
  • Then in a cup add the hot water, stir in corn starch to mix, next tablespoon of curry paste and any extra spices you think you would like. I suggest not trying anything else until you know what the kids will like. My 2 yr old likes it spicier but the older ones prefer it mild.
  • Add the water mix to the chick peas, simmer for another 20 min or so.
  • Enjoy with a flat bread, or even toast.

  • Rinse the white chickpeas for a couple of times in water. Then soak the chickpeas in enough water overnight or for 7 to 8 hours.
  • In a grinder or blender take 1 medium sized chopped onion, 2 medium sized chopped tomatoes, 1 inch chopped ginger, 4 to 5 garlic cloves and 1 chopped green chili.
  • Using a sieve, sift the maida (all-purpose flour), salt and baking soda in a mixing bowl. Then add the semolina and sugar to the sifted ingredients.

  • First, take mutton, spinach and wash them separately. Chop spinach leaves, trimming its stem. Next, place a deep-bottomed pan on medium flame and add ghee, a cup of water, turmeric and red chili powder along with salt according to your taste.
  • Add mutton and turn the flame to medium low, let it simmer until the mutton is well cooked. Once done, add spinach, rice, moong dal, chopped green chilies and cook thoroughly until the ingredients turn tender.
  • Once they do, start grinding it to a paste with the help of the back of a ladle. Transfer the cooked mixture in a serving dish. Next, place a pan on medium flame, pour the remaining ghee and fry onions until golden brown.
  • Pour the tempering over the dish. Serve along red chili chutney, onion, lemon wedges and chopped coriander leaves in order to make it taste all the more flavorful.
