SHRIMP WITH SPICY ORANGE FLAVOR

Shrimp with Spicy Orange Flavor image

Steps:

  • Combine oil and garlic in a skillet no larger than 10 inches across. Turn the heat to medium, and cook until the garlic begins to sizzle, then turn the heat to medium-low. When garlic is blond, stir in chiles, orange zest, and orange juice. Add shrimp, and raise the heat to high.
  • Cook, stirring occasionally and sprinkling with salt, until the shrimp are all pink, about 4 minutes. Remove from heat, and add most of the cilantro and the lemon juice. Taste, and adjust seasoning. Serve garnished with the remaining cilantro.

1/4 cup extra-virgin olive oil
3 or 4 large cloves garlic, cut into thin slivers
2 or more small dried hot red chiles
Grated zest of 1 orange
Juice from 1 orange
16 large shrimp, peeled
Coarse salt
1/4 cup minced cilantro leaves
1 tablespoon freshly squeezed lemon juice, or to taste

From Cooking Light. Just like Chinese takeout or PF Chang's Orange Peel Shrimp (without the orange peel). This takes no time to make and you already have most of the ingredients. We halved the recipe and cooked up 11 large shrimp from Costco for 2 people. At first we burned the garlic and ginger, so we started over and turned the heat down to medium. Enjoy! ** I took note from a reviewer and added some steamed broccoli with the sauce in step 6 - AWESOME! **

Stir-Fry Shrimp With Spicy Orange Sauce image

Steps:

  • Place shrimp in a medium bowl. Sprinkle with cornstarch; toss well to coat. Set aside.
  • Combine juice, soy sauce, honey, vinegar, and chile paste, stirring with a whisk; set aside.
  • Heat canola oil in a large nonstick skillet over medium-high heat.
  • Add minced ginger and garlic to pan; stir-fry for 15 seconds or until fragrant.
  • Add shrimp mixture; stir-fry for 3 minutes.
  • Add juice mixture and onions; cook 2 minutes or until sauce thickens and shrimp are done, stirring frequently.
  • Serve immediately.

1 1/2 lbs large shrimp, peeled and deveined

2 tablespoons honey
1 tablespoon rice wine vinegar
1 tablespoon chili paste with garlic (such as sambal oelek)

1/3 cup green onion, chopped

  • In a large skillet, heat 2 tablespoons of the oil. Season the shrimp with salt and pepper. Cook half of the shrimp over moderate heat, turning once, until white throughout, 3 to 4 minutes. Transfer the shrimp to a plate. Repeat with the remaining olive oil and shrimp. Return all of the shrimp to the skillet, add the orange glaze, season with salt and pepper and toss to coat. Transfer the shrimp to a platter, garnish with parsley and serve with rice.

  • Thaw and peel the shrimp. Dry the peeled shrimp with a paper towel and set aside. In a large glass measuring cup or small bowl, whisk together the orange juice, garlic, cayenne pepper, old bay and arrowroot. Set this aside next to the stove.
  • In a large skillet, over high heat, melt 2 tablespoons of butter. Working quickly with a pair of tongs, add the shrimp, one at a time, starting at the handle and working in a spiral pattern around the pan. Once all the shrimp has been added, the first shrimp should be ready to flip. Work back around the pan, turning the shrimp over in the order you first placed them in the pan. Cook for another 30-60 seconds, then remove the shrimp from the pan to a waiting plate. Leave the pan over the heat on high.
  • When the pan with the drippings starts to just slightly smoke, add the orange juice mixture to the pan. Stir with a spatula, scraping up all the bits on the bottom of the pan. Add the last tablespoon of butter to the sauce and reduce heat to a low simmer. Stirring occasionally, let it cook for a few minutes. The sauce should thicken just slightly.
  • Return the shrimp to the pan and toss to coat in the sauce. Let them mingle for just a few seconds and then serve hot. Enjoy!
