IRISH POTATO CASSEROLE #SP5

Official Contest Entry: Simply Potatoes 5Fix. Corned Beef & cabbage & mashed potatoes all in one glorious casserole. This makes any day a tribute to St. Patrick & the Irish!! (and aren't we all a little Irish at least once a year)

Steps:

  • Brown thin strips of bacon in large skillet til golden & crispy. Remove bacon to paper towel lined plate.
  • In the same skillet saute the onion until it begins to soften and then add the cabbage & cook until the cabbage is tender but not mushy.
  • Stir cabbage & onion, corned beef & bacon into Simply Potatoes shredded hash brown potatoes & place all in a 9 x 13 casserole dish. Top with the shredded cheese & bake in 350 degree over for 30-45 minutes until cheese is melted & bubbly and everything is hot.

8 ounces irish cheddar cheese or 8 ounces any aged cheddar cheese, shredded

  • Bring chicken broth to a boil, then add hash browns. Boil for 10 minutes, then add soup and cheese. Stir until dissolved. Add bacon pieces to each bowl.

Steps:

  • Preheat oven to 425 degrees. Drizzle the potatoes with 2 tablespoons melted butter and toss to coat. Arrange in single layer on baking sheet. Place in preheated oven and roast for 25 to 30 minutes or until lightly browned.
  • Transfer potatoes to large bowl, sprinkle in paprika, parsley and drizzle with remaining butter. Season to taste with ground black pepper and toss to combine.

Steps:

  • For one package of simply mashed potatoes (I use either the garlic or mashed with skins) spray an 8 x8 glass casserole/pan. In a large skillet cook cabbage & onion in olive oil over medium heat just until tender, seasoning with salt and pepper to taste. In casserole dish spread out one layer of potatoes about 1/2 package, then 1/3 of the cheese, then cabbage and onion. Top with remaining potato and cheese. Bake in a preheated 350 degree oven for 30 minutes or cheese is lightly golden brown.

Steps:

  • Begin by placing pepper jack cheese in small flat circles on a non stick baking sheet. Also, sprinkle Parmesan cheese on the same baking sheet. Bake at 400 degrees for approximately 5 minutes. Once the pepper jack cheese has baked, remove from oven and allow to cool completely. Meanwhile, prepare Simply Mashed Potatoes according to manufactures directions. After the cheese has cooled completely, pipe the Simply Mashed Potatoes onto the pepper jack cheese crisps. Now top with crispy bacon crumbles, sliced green onions and sprinkle with the baked Parmesan cheese. Serve and Simply wow your friends!

  • Combine first four ingredients.
