SERIOUSLY SINFUL CHOCOLATE FUDGE BROWNIES
I have never known a more popular chocolate brownie! I originally made these while working at a prestigious local hotel...We used to serve them just warmed enough to melt the fudge icing with a dollop of good vanilla ice cream or whipped cream...delicious. I also used to make these every year for a local charity bake sale. Every year we put the price up and every year people used to queue up for them and buy them by the handful. Over the years I have had more requests to make these than for any other kind of cake. Everybody seems to love them...I hope that you do too.

Steps:
- Melt the butter and chocolate in a large saucepan.
- Add the sugar and remove from the heat. Allow to cool slightly.
- Add the flour, eggs, vanilla essence and nuts if using them.
- Beat until smooth. Pour into a lined tin. Cook in a moderate oven until an inserted skewer comes out clean.
- For the icing:.
- Melt the butter with the milk. Add the icing sugar and sifted cocoa powder.
- Beat until smooth. Cool slightly then spread over the cooled brownie.
- Allow icing to set and then cut into squares.
- NB-These freeze very well.
SINFUL CHEESECAKE BROWNIES
This is my favorite brownie recipe, period. Super-chocolatey brownie swirled with twice the cream cheese of other marbled brownies. Chocolate chips are optional, but give the brownie more texture. I use the Ghirardelli bittersweet chocolate bar and Ghirardelli semi-sweet chocolate chips. From David Lebovitz (check his website for more fantastic recipes!)

- Line a 9-inch (23cm) square pan with foil, making sure it goes up all four sides. Use two sheets if necessary. Mist with non-stick spray or grease lightly.
- Preheat oven to 350 degrees (180C).
- In a medium saucepan, melt the butter and chocolate over low heat, stirring until smooth. Remove from heat and beat in the 2/3 cup (130g) sugar, then the eggs.
- Mix in the flour, cocoa powder and salt, then the vanilla and chocolate chips. Spread evenly in the prepared pan.
- In a separate bowl, beat together the cream cheese, the yolk, 5 tablespoons (75g) of sugar, and vanilla until smooth.
- Distribute the cream cheese mixture in eight dollops across the top of the brownie mixture, then take a dull knife or spatula and swirl the cream cheese mixture with the chocolate batter.
- Bake for 35 minutes, or until the batter in the center of the pan feels just set.
- Let cool, then lift out the foil and peel it away. Cut the brownies into squares.
- Storage: These will keep in an airtight container for a couple of days. They also freeze well, too.

- Heat oven to 350°F Lightly spray bottom only of 13 x 9-inch baking pan with cooking spray.
- In large saucepan, heat oil and chocolate over low heat until chocolate is melted, stirring frequently. Remove from heat. Stir in granulated sugar and applesauce until sugar is dissolved. Stir in egg whites and vanilla until completely blended. Add combined oats, flour, baking powder and salt; mix well. Spread evenly into pan.
- Bake 22 to 25 minutes or until edges begin to pull away from sides of pan. Cool completely in pan on wire rack. Cut into bars. Store tightly covered. Sprinkle with powdered sugar just before serving.

SINFUL BROWNIES
Adapted from an old Easy Entertaining magazine. I did these for Valentines Day and they were easy to do and a great success.

- Pre heat oven 180°C.
- Butter 20cm square cake tin.
- Melt butter and choc in saucepan over low heat.
- When melted ans smooth, set aside to cool.
- Beat eggs and sugar in large bowl till thick and creamy.
- Stir n cooled chocolate and golden syrup.
- Then add flour, cocoa, salt and nuts.
- Pour into tin, bake 30 minutes.
- Remove from oven, cool in tin then cut into squares.
