MARINATED FLANK STEAK

An Asian-style marinade flavors this tender grilled steak from Isabel Fowler of Fairbanks, Alaska. It's an ideal summer entree, but you can enjoy it year-round...just broil it indoors instead.

Steps:

  • Score surface of the steak, making diamond shapes 1/2 in. deep. In a shallow dish, combine the remaining ingredients; add steak and turn to coat. Cover; refrigerate for at least 2 hours, turning occasionally., Drain and discard marinade. Grill steak, covered, over medium heat for 6-8 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Let stand for 10 minutes. To serve, thinly slice across the grain.

Steps:

  • In a medium bowl, mix the oil, soy sauce, vinegar, lemon juice, Worcestershire sauce, mustard, garlic, and ground black pepper. Place meat in a shallow glass dish. Pour marinade over the steak, turning meat to coat thoroughly. Cover, and refrigerate for 6 hours.
  • Preheat grill for medium-high heat.
  • Oil the grill grate. Place steaks on the grill, and discard the marinade. Grill meat for 5 minutes per side, or to desired doneness.

Steak Skewers with Marinade image

Steps:

  • Heat a grill, grill pan, or broiler.
  • Combine all ingredients except steak in a large bowl. Season steak with salt and pepper and then add to marinade. Marinate for 40 minutes. Thread steak onto skewers* and then grill or broil, turning occasionally, until cooked to desired degree of doneness. Transfer to a serving plate and sprinkle with green onions and cayenne pepper, if desired.
  • *Cook's Note: If using wooden skewers, soak them in water for at least 10 minutes before threading meat.

1 medium onion, finely chopped
1/4 cup ouzo
1/2 cup herb and garlic marinade dressing
1 1/2 teaspoons dried garlic
2 tablespoons brown sugar
1/4 cup extra-virgin olive oil
1/3 cup chopped fresh mint

1-pound top sirloin steak, cut into 1-inch cubes

  • Whisk first 8 ingredients in small bowl. Place steak in baking dish. Pour marinade over. Cover and marinate 2 hours or overnight, stirring occasionally.
  • Preheat broiler. Thread steak strips on skewers; discard remaining marinade. Place skewers on broiler pan and cook to desired doneness, about 3 minutes per side for medium-rare.

Grilled Flank Steak with Ginger Marinade image

Steps:

  • In a nonreactive dish or large resealable plastic bag, combine all ingredients except steak and mix thoroughly. Add steak and turn to thoroughly coat. Cover dish or close bag and allow to marinate at room temperature for 30 minutes. (If you are making ahead, cover, and place in refrigerator. Can be marinated up to 24 hours in refrigerator.)
  • Once steak has marinated, remove from refrigerator and bring to room temperature for at least 15 minutes. Heat a lightly oiled grill pan to medium-high heat. When pan is heated, remove steak from marinade, shake off excess, add to pan and cook for about 6 to 8 minutes per side for medium rare.
  • Transfer to a cutting board, season with additional salt and freshly ground black pepper and let rest for 10 to 15 minutes. Slice thinly across the grain and serve.

Steps:

  • Whisk soy sauce, brown sugar, sesame oil, green onions, lemon juice, sesame seeds, ginger, and garlic together in a bowl until marinade is smooth.
  • Thinly slice steak with the grain into 1/4-inch thick pieces. Thread steak slices onto skewers and place in a flat plastic or glass container. Pour marinade over skewers. Steps:

  • Cut meat into 1/4" thick strips, across the grain of the meat.
  • COmbine the other ingredients and mix to blend. Pour over the meat and cover and refrigerate marinating at least 3 hours.
  • Turn meat occasionally.
  • Skewer meat by threading onto long bamboo sticks that have been soaked in water for 20 minutes.
  • Heat broiler pan. Cook 3-5 minutes, basting with marinade. Serve hot.
  • To reheat: Place on baking sheet, cover loosely with foil and heat in 350 degree oven for about 20 minutes or microwave high for 1 minute.
