SLIMMING WORLD INDIAN RICE

i mad a huge batch of this and froze it for lunches whilst im trying to get skinny you can throw whatver veg and stuff you want in it. i just threw in the easiest things that came to hand

Slimming World Indian Rice image

Steps:

  • put rice spices, salt and water into a large saucepan. Bring to the boil and then reduce down to lowest temperature. put on lid and simmer gently for 20 minute.
  • when rice is done mix amke sure lal water is drained mix through peas and chick peas adding tomatos if using, allow peas to thaw from heat of rice before eating.
  • once cool store in an airtight container. this will need to be eaten in 3 working days make sure you reheat until piping hot so the rice doesnt hurt your tummy alternatively freeze when cool and leave out to defrost reheating before eating.

4 1/2 cups water
1/2 teaspoon salt
1 teaspoon ground ginger
1 teaspoon fennell seeds
1 teaspoon cumin seed
1 teaspoon turmeric
2 teaspoons ground coriander
1 teaspoon black onion seeds
1/2 cup frozen peas
400 g chickpeas, drained
400 g chopped tomatoes (optional)

  • Over a medium heat, spray a large frying pan with low calorie cooking spray and cook the onions for around 5 minutes until softened.

  • Spritz a large pan with Frylight and add Garlic, Peas, Onion, Red Pepper and Carrot. Cook until starting to soften.
  • Add boiling water, Turmeric, Cumin, Paprika, Chilli Powder and Salt. Stir well, cover with a lid and bring to simmer for 3 minutes.
  • Add washed rice to the pan and stir well. Cover with a lid and simmer, stirring frequently for 20 - 25 minutes. Remove the lid half way through.
  • Cook until all of the liquid has been absorbed and the rice is cooked. If the liquid runs dry before the rice is cooked just add a little more boiling water.
