Northwest Creamy Smoked Salmon Fettuccine Alfredo image

Steps:

  • Bring a large pot of lightly salted water to a boil.
  • Add pasta and cook for 8 to 10 mis or until al dente; drain.
  • In a medium saucepan, combine cheeses, margarine, milk, garlic powder, basil and stir over low heat until smooth and creamy about 10 to 15 minutes.
  • Toss sauce vegetables, smoked salmon, sauce and pasta in a large bowl.
  • Sprinkle with nutmeg.

1/2 lb dry fettuccine pasta
1 (8 ounce) package cream cheese
3/4 cup grated parmesan cheese
1/2 cup margarine
1/2 cup milk
1 teaspoon garlic powder
1/4 teaspoon dried basil
1 pinch ground nutmeg
red pepper, cut
1 tomatoes, seeded and cut
mushroom, cut
smoked salmon, broken into little pieces

Steps:

  • Cook fettuccine according to package directions. Meanwhile, in a large skillet, saute pepper in oil until tender. Add garlic; cook 1 minute longer., Stir in the Alfredo sauce, broccoli, salmon and basil. Cook, uncovered, over medium heat for 5-7 minutes or until heated through. Drain fettuccine. Add to skillet; toss to coat.

Steps:

  • Saute onion in the butter in a pan until clear. Add the salmon and saute at medium to low heat for approximately 2 more minutes. Very gradually, start to add the cream. Stir constantly until thickened. Sauce should be very thick once you have added all the cream. Top with tomato and parsley; season with pepper.

Smoked Salmon Fettuccine Alfredo image

Steps:

  • 1. Cook pasta according to the directions; drain.
  • 2. Meanwhile in a large skillet over medium heat, add oil and when hot, add onions and garlic; sauté for 1 minute. Add butter and stir until melted.
  • 3. Pour in heavy cream and wine; bring to a simmer. Add salmon, ½ cup cheese and season with white pepper and red pepper flakes; stir well.
  • 4. Add the cooked pasta and gently combine it into the mixture. Add half of the remaining cheese, mix well before adding the rest of it. Stir and let the mixture simmer for 2 minutes.
  • 5. Add lemon zest and dill; stir well and serve immediately.

  • Place salmon, skin side down, on a broiler rack coated with cooking spray. Sprinkle with 1/8 teaspoon pepper. Broil 4-6 in. from the heat for 10-12 minutes or until fish flakes easily with a fork. "Healthy alfredo sauce" is probably an oxymoron, but this is the way I always make a creamy sauce for pasta. It's obviously not an authentic alfredo, but we like it. I created this dish to use up some smoked salmon, and we totally enjoyed it. While I think you can adjust most of the ingredients here to your taste, I wouldn't mess with the smoked salmon or the capers, since they really are the dominant flavors.

Smoked Salmon Fettuccine With Healthy Dill Alfredo Sauce image

Steps:

  • Boil and prepare fettuccine as directed on package instructions; drain and set aside.
  • (Before draining, reserve about 1/4 cup of pasta cooking water, which you can use later to thin the sauce or moisten the vegetables as you cook them, if necessary).
  • Place cottage cheese, 1 Tbsp parmesan cheese,flour, black pepper, lemon juice, garlic, and dill weed in a food processor bowl and pulse until smooth; set aside.
  • In a large nonstick pan or wok, heat oil over medium heat and saute green pepper and onion for about 3 minutes.
  • Turn heat down to low or low-medium and allow the pan to cool enough that the next ingredients won't burn.
  • Add tomatoes, capers, salmon, and sauce to the pan; stir and cook for 1-2 minutes or until heated through.
  • Add pasta and parsley and continue to cook on low for 1-2 minutes.
  • Remove from heat and serve, topping individual servings with pepper, lemon pepper, and parmesan to taste.

Fettuccine With Asparagus and Smoked Salmon image

Steps:

  • Snap off the ends of the asparagus where they break naturally and peel the stalks. Cut the asparagus on a slant to pieces about an inch long.
  • Steam the asparagus until they are just barely tender and still bright green, about three minutes. Rinse under cold water, drain well on paper towels and set aside.
  • Bring a large pot of salted water to a boil for the pasta.
  • While the water is coming to a boil, melt the butter in a large heavy skillet. Add the shallots and saute until soft but not brown. Stir in the cream and simmer about five minutes, until the cream has thickened somewhat.
  • Cut the salmon into slivers, add it to the cream and remove the skillet from the heat. Season with pepper and lemon juice. Add the asparagus.
  • When the pot of water is boiling, add the fettuccine, stir it once or twice, then cook two to three minutes after the water has returned to a boil. Drain well.
  • Briefly reheat the sauce. Transfer the fettuccine to a warm serving bowl, pour the sauce over it and toss. Sprinkle with dill and serve.
