- Pit and scoop out avocados into a bowl. Add the onion, garlic, peppers, adobo sauce, cilantro, lime zest, lime juice, and salt. Mash and taste to adjust salt. Serve with chips.

Steps:
- In a small bowl or molcajete, combine 2 tablespoons of the minced onion, lime juice, chiles and salt.
- Smash with fork or pestle to a coarse paste.
- Cut avocados in half, remove seeds and scoop pulp into bowl or molcajete.
- Add the cilantro and mash, leaving some lumps; taste and adjust the salt if necessary.
- Sprinkle with additional cilantro and the reserved 1 tablespoon minced onion.
- Serve immediately.
GUACAMOLE
You can make this avocado salad smooth or chunky depending on your tastes.

This guacamole has been a hit at our house for years. Great for the Superbowl or any occasion. Sour cream and cream cheese make the guac extra creamy. Spice it up with crushed red pepper.

- Cut avocados all the way around with a sharp knife.
- Scoop out the pit, then spoon avocado flesh away from skin into a mixing bowl.
- Add the juice of 1 lime, salt to taste, sour cream and chipotles in adobo.
- Mash well with a fork or potato masher until smooth.
- Serve with tortilla chips or your favorite mexican dishes.
