SNOW DAY COCONUT BROWNIES

Snow Day Coconut Brownies image

Steps:

  • Make the brownies: Preheat the oven to 350˚. Line a 9-by-13-inch baking pan with foil, leaving a 2-inch overhang on the two short sides; coat with cooking spray. Combine the chocolate and coconut oil in a medium saucepan over medium heat. Cook, stirring, until melted, 3 minutes. Remove from the heat and stir in the granulated sugar, eggs and coconut extract until well combined. Stir in the flour and salt until smooth. Stir in the coconut and nuts. Spread the batter evenly in the prepared pan.
  • Bake until the brownies are dry on top and a toothpick inserted into the center comes out clean, 30 to 35 minutes. Transfer to a rack and let cool completely in the pan.
  • Meanwhile, make the icing: Combine the meringue powder, confectioners' sugar, coconut extract and 3 tablespoons water in a large bowl. Beat with a mixer on medium-high speed until stiff and glossy but still spreadable, 2 to 3 minutes. Thin with up to 2 more tablespoons water, if needed.
  • Lift the brownies out of the pan using the foil overhang. Scrape the icing on top and spread to the edges. Sprinkle with the coconut and white nonpareils; gently press to adhere. Let the icing harden, 1 to 2 hours. Cut into pieces.

Bake according to package baking times for 13 x 9 pan size. 7. Cool completely in pan on wire rack. 8. Spread frosting over brownies. 9. Sprinkle with remaining morsels and coconut, if desired. 10. This was a big hit at our neighborhood Holiday Party last year. They are so moise and colorful during the Holidays. I'm planning on making these again this year.

Festive Snow-Topped Brownie Bars image

Steps:

  • 1. Preheat your oven to 350 and grease a 13 X 9 inch baking pan and set aside.
  • 2. Combine flour, cocoa, baking powder and salt in mixing bowl.
  • 3. Microwave butter in large, microwave safe bowl on high power for 1 minute; watch not to burn and take out and stir until melted.
  • 4. Remove from microwave and stir in sugar, water, eggs and vanilla until all is blended.
  • 5. Gradually stir in flour mixture and one cup of morsels.
  • 6. Spread into prepared baking pan. Place in oven and bake for 18 to 25 minutes or until a toothpick inserted in center comes our slightly sticky.
  • 7. Remove from oven and place on a whir rack to cool completely.
  • 8. When cool;spread with whipped topping and sprinkle with remaining morsels and refrigerator until serving time.
  • 9. When ready; remove from refrigerator and cut into bars.

I adopted this one from the RecipeZaar account. I have not had a chance to make this. **I am sure that you could easily substitute regular chocolate chips for the morsels. I don't think I can find morsels here so I will use normal chocolate chips when I make these... hopefully that will be soon!

  • Fit a heatproof bowl over a pan of gently simmering water, making sure the water doesn't touch the bottom of the bowl, and put the butter in the bowl. Coarsely chop 6 ounces of the chocolate and scatter it over the butter. Finely chop the remaining 2 ounces of chocolate and set it aside. Leave the bowl over simmering water, stirring occasionally, until the ingredients are just melted, taking care that they don't get so hot that they separate. Remove the bowl from the pan.
  • Using a whisk or heatproof spatula, stir in the sugar. The mixture will turn grainy, but that is ok. One by one, add the eggs, whisking energetically after each one goes in and then for a minute or two more. The dough will become smoother, shinier, and thicker. Whisk in the vanilla and the salt and then, less vigorously, the flour. Stir in the finely chopped chocolate. Transfer the dough to a bowl, cover and refrigerate for at least 3 hours.
  • When ready to bake, center a rack in the oven and preheat to 350 degrees F. Line two large baking sheets with parchment paper or silicone baking mats.
  • Put confectioners' sugar in a small bowl. Using a medium cookie scoop, scoop out level portions of dough or use a tablespoon to get rounded spoonfuls. Roll each into a ball and drop into the bowl of sugar. Gently toss the dough around in the sugar until well coated. Place the ball on one of the baking sheets and repeat, giving the balls about 2 inches of spread space.
