Steps:
- Crumble yeast in a mixing bowl.
- Melt butter.
- Add milk and warm until lukewarm, 99M-0F/37M-0C.
- Dissolve the yeast in a little of the milk mixture. Add the rest of the liquid, salt, sugar, syrup, ammonium carbonate, graham flour, and rye flour to the yeast mixture. Work in the flour.
- Cover and let rise for about 45 minutes.
- Turn out onto a floured surface. Divide the dough, which shouldn't be too stiff, into 14 round balls.
- Roll out very thin (1/2 cm or 1/8" thick) preferably using a rippled rolling pin.
- Wrap the thin dough around the rolling pin and brush away any extra flour.
- Carefully place the bread on the stove in a heated frying pan.
- Fry about 2 minutes on each side over medium heat. Place on a cooling rack, cover, and allow to cool.

- Sift the flours and 1 tsp salt into a large bowl. Add 1 tbsp of the oil and 150ml warm water. Bring together into a soft but not too sticky dough (you may need up to 175ml water). If it feels too wet, add some flour. If it's too dry, add water.
- Tip onto a floured surface and knead for 4-5 mins, or until smooth. Put the dough in an oiled bowl, cover and leave for 30 mins.
- Tip onto a floured surface. Divide into six balls and roll each out into a thin, 18-20cm wide circle using a rolling pin. If you prefer, you can divide again into twelve balls to make smaller flatbreads.
- Brush a heavy-based pan with oil and cook one flatbread over a high heat for 1-2 mins on each side, or until golden and starting to puff. Put on a plate and brush with butter. Repeat with the rest of the dough.

- Begin by placing the wet ingredients (milk & butter) in a saucepan and simmer to 98°F/37°C. Don't let the wet ingredients come to a boil.
- While the wet ingredients are warming, whisk together the dry ingredients in your mixer bowl. Stir the ingredients well to blend.
- Once the wet ingredients are warmed to 98°F/37°C, remove from heat and let the wet mixture cool for a few minutes. Recheck the temp and make sure it's 96°F/36°C or slightly lower (this prevents killing the fresh yeast if using. If instant yeast is used, you can skip this temp check). Then, if you're using quick or fresh yeast add to the warm wets and dissolve. If instant yeast is used it should be blended with the dry ingredients. (See Note: 3)
- Using the mixing paddle slowly mix the dry ingredients, while adding the warm wet ingredient to the mixing bowl. Mix at an increased speed until well mixed (about 5 minutes). You may need to adjust a bit here with a dash of flour or a splash of milk. This dough should be loose and sticky (like making a ciabatta loaf) but will dry up when kneading with flour.

- Whisk bread flour, barley flour, yeast, salt and sugar together by hand in the bowl of a stand mixer.
- Whisk water, skyr and 1 tablespoon oil in a small bowl until fully combined. Transfer wet ingredients into mixing bowl with dry ingredients.
- Fit mixer with dough hook and begin mixing at medium-low speed until dough just comes together. Increase mixer speed to medium and knead dough for three minutes. Stop the mixer and add the chopped fresh herbs. If dough is sticking to the sides or the bottom after the first 3 minutes of kneading, add an additional tablespoon of bread flour before continuing the kneading process. Continue kneading at medium speed until the dough is tacky but not sticky and clears the bottom and sides of the bowl, approximately 3 more minutes. Add an additional tablespoon or two of bread flour if dough continues to stick to the sides or bottom of the bowl during the kneading process.
- Transfer dough to an oiled bowl. Cover and let rise for an hour at room temperature or until doubled in size.
