SOUPE A L'AIL (GARLIC SOUP)

Steps:
- Peel the garlic cloves and chop them coarsely.
- Heat the butter and oil in a saucepan or a small kettle. Add the garlic and cook, stirring, for about one minute. Do not brown the garlic. Add the water, salt and pepper. Bring to a boil, cover and simmer for 15 minutes.
- Strain the garlic and reserve the cooking liquid. Put the garlic and a half cup of the reserved cooking liquid in a blender or food processor and blend to a fine puree. Put the remaining cooking liquid in a saucepan and add the puree. Bring to a boil. Add the vermicelli. Stir and cook for about four minutes. Do not overcook.
- Meanwhile, blend the egg yolks and vinegar in a bowl.
- Turn off the heat under the saucepan. Drop in the egg whites. Do not stir. They will form a cloudlike mixture. Add the egg yolk mixture and stir very slowly. Serve immediately.

Bon Appetit, May 1994. This is a healthier version than many garlic soup recipes. This is a popular soup throughout France.

Steps:
- Combine first 4 ingredients in medium saucepan. Bring to boil. Cover, reduce heat to low and simmer until vegetables are tender, about 25 minutes. Puree in batches in blender. Season with salt and pepper. Rewarm over medium heat. Drizzle with cream, if desired.

This is THE best garlic soup EVER. It's from my much used & loved 'Feast of Soups' cookbook by Jacqueline Heriteau.

Steps:
- Separate the garlic cloves & scald 1 minute. Slip off & discard skins & scalding water.
- In a kettle over medium heat, combine cold water, garlic, salt, pepper, cloves, parsley, & oil. Bring to a boil, cover, reduce heat, & simmer 30 minutes. Remove from heat.
- With a slotted spoon, lift out the cloves, parsley, & garlic. Discard parsley & cloves. Puree the garlic with 2c of broth, in a blender or food processor, or press through a sieve.
- In a medium bowl beat the egg yolks until thick. Whip in the butter, then the garlic puree, then 1c broth. Whip this mixture into the kettle. Reheat to just below boiling, but do not boil.
- To serve: Place a piece of French bread, toasted & buttered in the bottom of each soup bowl & sprinkle generously with cheese. Ladle the soup over the bread.
- To make ahead: Complete through Step 3, then finish just before serving.

SOPA DE LIMA (MEXICAN LIME SOUP)
Hot or cold outside, this soup is light and refreshing. I first enjoyed this dish while sitting ocean-side in Mexico. Goes great with a margarita or beer and a side of chips and salsa. Use whatever chilies you want (hot or mild) depending on the amount of heat you enjoy. Serve in bowls with crushed tortilla chips or strips on top.

- Bring the chicken broth, chicken breasts, red onion, garlic, oregano, salt, pepper, and thyme to a boil in a large pot; reduce heat to medium-low and simmer until the chicken breasts are no longer pink in the center and the juices run clear, 15 to 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove the cooked chicken to a cutting board and shred into bite-sized strips; return to the simmering pot.
- Heat the oil in a skillet over medium heat; cook the green onions and green chile pepper in the hot oil until tender, about 5 minutes. Stir the tomatoes into the mixture and continue cooking until soft, about 5 minute more; pour the mixture into the pot with the chicken soup. Season with the salt; return the soup to a simmer. Add the lime juice and 1/2 a lime; cook another 10 minutes. Remove the pot from the heat and remove the lime half; stir in the cilantro to serve.
