SOUTH AFRICAN CURRIED LAMB CASSEROLE WITH RAISINS & ALMONDS

In South Africa, curried ground lamb, bread soaked in milk, almonds, raisins and bay leaves fashioned into a kind of flat meat loaf is described by some as a collision of Dutch and Malayan pantries. Next time you crave meat loaf, try this version. From "Home Cooking Around the World." Very good served with shredded carrot salad.

South African Curried Lamb Casserole with Raisins & Almonds image

Steps:

  • In large skillet, saute the ground lamb, working in batches if necessary to avoid crowding the skillet, until lamb is no longer pink, 3 to 4 minutes per batch.
  • As it browns, remove lamb to a colander to drain excess water and fat.
  • In a small bowl, soak the bread in 1/4 cup milk for 20 minutes, turning it over occasionally.
  • Squeeze excess milk out of bread and then tear it into pieces.
  • Heat oven to 375ºF.
  • Lightly butter a 13-by-9-by-2-inch glass baking dish.
  • In a large skillet, heat the butter.
  • Add the onions and saute until softened, about 5 to 8 minutes.
  • Add the garlic and curry powder and saute 1 minute.
  • Remove from heat.
  • In a large bowl, mix together the lamb, onion mixture, raisins, almonds, lemon juice, chutney, salt, pepper and 1 egg, slightly beaten, until all ingredients are evenly distributed.
  • Spoon into prepared baking dish.
  • Tuck the bay leaves into lamb mixture.
  • Bake at 375ºF.
  • for 30 minutes.
  • In a glass measuring cup, stir together the remaining egg and remaining 3/4 cup milk.
  • Pour over lamb mixture.
  • Bake until egg mixture is set, about 10 to 15 minutes.
  • Remove and discard bay leaves before serving.

1/2 teaspoon salt
1/4 teaspoon black pepper

  • Preheat oven to 350°. Combine first 10 ingredients. Add ground beef; mix well. Pat meat mixture into a 9x5-in. loaf pan. Bake until no pink remains, 60-75 minutes.

Not your regular meatloaf! This sweet and savory loaf is enhanced with the textures of raisins and almonds and the spiciness of curry. Pleasantly different. If using high quality curry, use 1 1/2 tablespoons; most store bought curries are not as flavorful so use more. If looking for more sweetness, try adding apricot preserves or a fruit chutney.

Bobotie (South African Meatloaf) image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a large baking dish.
  • Melt butter in a skillet over medium heat. Cook and stir onion in melted butter until browned, 5 to 7 minutes.
  • Combine 2 eggs, 1 cup milk, oats, raisins, almonds, vinegar, curry powder, sugar, salt, turmeric, and black pepper in a large bowl. Add onions and ground beef; mix well. Spread the beef evenly into the prepared baking dish; top with bay leaves.
  • Bake in preheated oven for 30 minutes. Remove from oven and drain excess fat from the beef.
  • Beat 1 egg and 1/4 cup milk together in a bowl; pour over the beef mixture.
  • Continue baking in oven until the top is beginning to brown, about 30 minute more. Remove and discard bay leaves to serve.

  • Put chopped bread into a small shallow bowl and pour milk on top. Press bread into milk and set aside.
  • Combine all the dried spices in a small bowl: curry, coriander, ginger, thyme, turmeric, cinnamon and cayenne.
  • Heat 2 tablespoons oil in a large skillet. Sauté onions on medium low heat for 10-12 minutes, until lightly browned. Add garlic and cook, stirring, for 1 minute. Add all the spices and cook, stirring, for 30 seconds. Remove skillet from the heat. Add a tablespoon or two of water if the spices are sticking to the bottom of the pan. Scrape the onion mixture into a large bowl and and let it cool for a few minutes.
  • Gently squeeze most of the milk from the bread and add the bread to the bowl with the onions. (leftover milk won’t be used for this recipe) Add the lamb, beef, carrots, apple, raisins (optional), apricot preserves, lemon juice, salt and pepper. Mix everything together (best to use your hands) until just combined. Press mixture evenly into a 2-3 quart casserole. Bake in the preheated oven for 25 minutes, uncovered.
