East Texas Egg Gravy image

Steps:

  • 1. Add flour to hot drippings in frying pan. Cook over medium heat till mixture starts to brown. 3 to 5 minutes. Whisking when mixture starts turning color.
  • 2. Add 1 cup of water while whisking and heat a minute before gradually adding the second cup of water. Continue whisking till mixture starts to bubble lightly.
  • 3. Add eggs and bring back to a bubble while whisking. Remove from heat and season to taste.

1 1/2 Tbsp bacon drippings
1/4 c flour
2 c water or combo water and milk
3 eggs
salt, pepper and tabasco to taste

Basic Old-Fashioned Giblet Gravy Recipe - (4.8/5) image

Steps:

  • Remove liver from giblets and refrigerate. Place giblets in saucepan, cover with 4 cups cold water and bring to a boil. Reduce heat and simmer for about an hour. Now add the liver and simmer for another 30 minutes. Drain in a colander, allow to cool, chop and set aside. Melt butter in a heavy saucepan and stir in the flour. Cook and stir for 3 to 5 minutes, or until butter barely begins to turn golden. Slowly stir in drippings or chicken broth and milk or half and half. Continue cooking and stirring until thickened. Season with salt and pepper. Stir in hard-cooked eggs and chopped giblets and serve. Makes 3 cups.

Giblets from 1 turkey or chicken
4 cups cold water
4 tablespoons butter
4 tablespoons flour
2 cups pan drippings or chicken broth
1/2 cup milk or half and half (optional)
1/2 teaspoon each salt and pepper
2 hard-cooked eggs, chopped (optional)

Steps:

  • Add the turkey fat to a large pot over medium-high heat. Add the shallots and saute until translucent. Whisk in the flour and cook until medium golden brown in color, about 3 to 4 minutes. Slowly whisk in pan the drippings with the stock and bring to a boil, then reduce the heat. Simmer until thick or until desired consistency is reached, about 10 to 15 minutes. Stir in the chopped egg and season with salt and pepper, to taste, if needed. Serve alongside that big beautiful bird!

4 tablespoons skimmed fat from turkey drippings
3 tablespoons chopped shallots
4 tablespoons unbleached all-purpose flour
Turkey pan drippings, (no fat) mixed with low-sodium turkey or chicken stock to make 4 cups
4 eggs, hard-boiled and chopped
Salt and freshly ground black pepper

Steps:

  • Heat milk.
  • Beat eggs, flour and a little salt.
  • When milk is hot, add a few tablespoons of hot milk to the egg mixture to temper the eggs.
  • Then pour and stir the tempered egg-flour mixture into the milk.
  • Cook until thick.
  • Pour over toast or bread.

Southern Fried Eggs Over Buttermilk Biscuits with Sausage Gravy image

Steps:

  • Heat 1 tablespoon oil or butter in a large skillet over medium-high heat. Crack 4 eggs into skillet, and cook, uncovered, until whites are set, about 2 minutes. (If you prefer to cook your yolks further, cover skillet.) Transfer to a plate. Repeat. Arrange 1 or 2 biscuits on each plate. Top with gravy. Place 1 egg on each biscuit. Season with salt, pepper, and hot sauce.

2 tablespoons extra-virgin olive oil, or unsalted butter
8 large eggs
8 Flaky Buttermilk Biscuits
Sausage Gravy
Coarse salt and freshly ground pepper, to taste
