LEMONADE CHICKEN
It doesn't take a seasoned cook to turn out this scrumptious entree. Served with your favorite salad, it makes a wonderful summer supper. Try it with limeade or orange juice in place of lemonade. My family raves about every refreshing version.

- In a large resealable bag, combine the first five ingredients. Remove half of the marinade to a small bowl; cover and refrigerate. Add chicken to the bag; seal and turn to coat. Refrigerate overnight, turning occasionally., Drain and discard marinade. Grill, covered, over medium heat for 10 minutes on each side, basting occasionally with reserved marinade. Grill 5-10 minutes longer or until chicken juices run clear; basting and turning several times.

SOUTHERN LEMONADE CHICKEN
A sweet and sour chicken recipe that has the surprising ingredient of frozen lemonade concentrate. The sauce simmers in the crockpot and becomes mellow and delicious - not too lemony, just right!

- Rinse pieces of chicken in water, then roll damp chicken into seasoned flour. Brown in fat in a heavy skillet. Remove chicken and place in crockpot. Combine lemonade concentrate, brown sugar, ketchup and vinegar; mix well. Pour lemonade mixture over chicken. Cover and cook on HIGH for 3 to 4 hours or LOW for 6 to 8 hours. Remove chicken from crockpot and cover to keep hot. Transfer liquid to saucepan over medium-low heat. Skim fat; add optional vegetables, combine cornstarch and cold water and add slowly to liquid, while stirring. The sauce will be thickened after it reaches a full rolling boil, when thickened, serve the chicken along with hot cooked rice. The vegetables will still be crisp-tender.
- It tastes a bit like sweet and sour chicken - always a hit with my 5 children - we double the recipe since we're a two chicken family now.

- Cut each chicken breast in half lengthwise. Place chicken between 2 sheets of heavy-duty plastic wrap; flatten to 1/4-inch thickness, using a rolling pin or flat side of a meat mallet. Sprinkle chicken with salt and pepper. Lightly dredge chicken in flour, shaking off excess.
- Melt 1 Tbsp. butter with 1 Tbsp. olive oil in a large nonstick skillet over medium-high heat. Cook half of chicken in skillet 2 to 3 minutes on each side or until golden brown and done. Transfer chicken to a serving platter, and keep warm. Repeat procedure with 1 Tbsp. butter and remaining olive oil and chicken.
- Add broth and lemon juice to skillet, and cook 1 to 2 minutes or until sauce is slightly thickened, stirring to loosen particles from bottom of skillet. Add 8 lemon slices.
- Remove skillet from heat; add parsley and remaining 2 Tbsp. butter, and stir until butter melts. Pour sauce over chicken. Serve immediately. Garnish, if desired.

- In a large bowl, stir together lemonade concentrate, soy sauce, garlic powder and seasoned salt. Place chicken in a dish or in a large Ziploc bag. Pour marinade over top. Toss to coat the chicken with the marinade. Cover and refrigerate for 20-30 minutes.
- Remove chicken from the dish. Discard marinade. Allow chicken to sit on the counter at room temp while you prepare the grill.
- Preheat the oven to 425 degrees F. Place chicken and marinade in a large baking dish. Cover with foil and bake for 15 minutes. Remove cover, spoon sauce over the chicken, and bake for 10-15 more minutes, or until chicken reaches an internal temperature of 165 degrees F. If you want your chicken crispier on the outside, you can place the dish under the broiler for the final few minutes.
