GRILLED SOUTHWESTERN SHISH KEBABS
These shish kebab are so easy to prepare, not to mention colorful and very tasty. It's the perfect dish for a summer barbeque. Try serving with a side of white rice, French fries, or grilled baby red potatoes with fresh rosemary!

Steps:
- Combine lager, white onion, cilantro, lime juice, garlic, salsa, red pepper flakes, salt, and pepper in a large bowl. Mix together until marinade is well blended. Add beef carefully. Cover with plastic wrap and refrigerate, 6 hours to overnight.
- Thread the marinated beef, pineapple chunks, red onion chunks, green bell pepper pieces, mushrooms, and cherry tomatoes alternately through skewers. Place shish kebabs on a baking sheet or jelly roll pan.
- Preheat grill for medium heat and lightly oil the grate. Grill shish kebabs until beef is firm and reddish-pink and juicy in the center, about 4 minutes per side.

- In a large bowl, combine chicken and vegetables. Drizzle with 1/3 cup dressing and toss to coat. SWEET AND SOUR CHICKEN SKEWERS

Steps:
- Put the vinegar, sugar, reserved pineapple juice and cornstarch slurry into a small saucepan. Bring to a boil over medium heat, then reduce heat and simmer until the sauce thickens, about 8 minutes. Remove from heat and set aside. Reserve half of the sauce in a small serving bowl to be used as a dipping sauce alongside the skewers.
- Quarter the red pepper and remove the core and seeds. Slice each quarter into 6 pieces. Cut each chicken thigh into 6 pieces.
- Preheat a grill pan or an outdoor grill to medium heat.
- On each of the 8 skewers, place 1 chunk of pineapple, then a piece of chicken thigh, followed by a piece of red pepper. Repeat with another piece of pineapple then chicken, then red pepper. Season skewers with salt and pepper, to taste. Grill the skewers on oiled grill, cooking for 4 minutes on each side. Brush the sweet and sour sauce all over the skewers and grill and additional 2 minutes per side. Remove to a serving dish and serve with the reserved sweet and sour sauce, for dipping.

- In small bowl, combine margarine, cilantro, cumin, garlic salt and hot pepper sauce; mix well.

- Preheat grill to medium-hot.
- Toss pork cubes with seasoning in resealable plastic bag until pork is evenly coated.
- Thread pork cubes, alternating with pepper and onion pieces, onto skewers.
- If using any extra ingredient chunks alternate them on the skewers also.

- Heat a large heavy bottomed pot that has a lid over MED HIGH heat. Add 1 Tbsp olive oil, then add diced chicken breasts. Sprinkle fajita seasoning mix over chicken and stir. Cook 6-8 minutes, until lightly golden brown and cooked through. Set chicken aside on a plate and cover to keep warm.
