SPAGHETTI SQUASH LO MEIN

My colorful Lo Mein is a lighter version of the classic Chinese dish that everyone at our table loves. Try it with a squirt of Sriracha. -Loanne Chiu, Fort Worth, Texas

Spaghetti Squash Lo Mein image

Steps:

  • Halve squash lengthwise; discard seeds. Place squash on a microwave-safe plate, cut side down; microwave on high until tender, about 15 minutes. Cool slightly. Separate strands with a fork., In a large skillet, heat 1 teaspoon oil over medium-high heat; saute sausage until browned, 4-6 minutes. Remove from pan., In same pan, heat 2 teaspoons oil over medium-high heat; saute carrots and cabbage until crisp-tender, 4-6 minutes. Stir in salt and pepper. Add squash, sausage and remaining oil; toss and heat through. Sprinkle with cilantro. If desired, serve with soy sauce and chili sauce.

1/4 cup chopped fresh cilantro
Reduced-sodium soy sauce and Sriracha chili sauce, optional

  • Preheat the oven to 450 degrees F. Cut the spaghetti squash length-wise and scoop out the seeds. Place the squash cut-side-up on a rimmed baking sheet. Roast in the oven for 35-45 minutes, until firm yet cooked enough to shred. Prep all other ingredients while waiting.
  • When the spaghetti squash is almost ready. Preheat a large skillet to medium-high heat. Pour the sesame seeds on a plate. Then salt and pepper the ahi steaks on both sides and press into the sesame seeds to coat. Add 1 teaspoon sesame oil to the skillet. Once hot, add the ahi steaks and sear for no more than 2 minutes per side. (I do mine for 90 seconds per side.) Allow the ahi to rest.
  • Shred the roasted spaghetti squash with a fork and place in a large mixing bowl. Add all remaining ingredients and toss to coat. Then while the spaghetti squash is still warm, arrange it on plates and slice the tuna steak into thin strips. Place the tuna over the top and serve!

When the squash is cool enough to handle, scrape out the flesh into a medium bowl.
  • Meanwhile, combine soy sauce, oyster sauce, rice wine (or sherry), Sriracha (if using), honey (or sugar) in a small bowl.
  • Heat oil in a wok or large skillet over medium-high heat. Add scallions, garlic and ginger; cook for 15 seconds. Add carrot, bell pepper and snow peas and cook, stirring frequently, until the vegetables are tender, 3 to 5 minutes.
  • Add the squash and sauce to the vegetables and toss to coat. Cook until heated through, about 1 minute more.
