- Stir boiling water into gelatin in large bowl at least 2 minutes until completely dissolved. Refrigerate 15 minutes. Gently stir in club soda.
- Pour into clear 2-1/2-quart glass punch bowl; cover. (For extra sparkling bubbles, refrigerate 15 minutes, then gently stir for 5 seconds.)
- Refrigerate 4 hours or until firm. Top with fruit just before serving. Store leftover dessert in refrigerator.
