  • Fill a jug with ice and pour over the Pimm's and lemonade. Give it a good stir then add the mint, cucumber and fruit.

PIMM'S ICED TEA

Serving delicious drinks at large parties is a hard task without a full bar of mixologists, right? NO! Let me introduce Mr. Punch. He is a big bowl of cocktail normally containing fruit, alcohol, and a mixer. Of course, I like to use British flavors, but you can tailor this to your taste. My biggest tips: Use lemon to preserve freshness and use homemade mixers, such as iced tea, to keep costs down. All that's left is to hold your teacup up and make a toast to all those present, to your loved ones and, of course, to THE QUEEN!

Steps:

  • 1 Fill a highball glass with ice. Add the Pimm's, tea, agave syrup or honey, and lemon juice and stir well. Decorate the drink lavishly.

3/4 cup brewed Orange Pekoe tea, chilled
1 1/2 teaspoons agave syrup or honey
1 1/2 tablespoons freshly squeezed lemon juice
citrus wedges, mint sprigs, quartered strawberries and cucumber ribbons, to garnish

Steps:

  • In an airtight container, combine the first five ingredients. Store in a cool, dry place for up to 6 months. Yield: about 7-1/2 cups total. , To prepare tea: Dissolve about 1 tablespoon tea mix in boiling water; stir well. Yield: 1 serving., To prepare punch: In a 3-qt. slow cooker, combine the juices, 1/4-1/3 cup tea mix and cinnamon sticks. Cover and cook on low for 4 hours. Yield: about 12 servings (6 ounces each).

2 teaspoons ground cinnamon

1 cup boiling water
ADDITIONAL INGREDIENTS FOR HOT SPICED PUNCH:
2 quarts apple juice or cider
1-1/2 cups cranberry juice
3 cinnamon sticks (3-1/2 inches)

Can be prepared in 45 minutes or less but requires additional unattended time.

Spiced Tea with Pimm's image

Steps:

  • In a heat-proof pitcher combine the tea bags with 4 cups boiling water, the sugar, the broken cinnamon sticks, the cloves, and the zest, let the tea steep for 5 minutes, and discard the tea bags. Let the tea cool, chill it for 1 hour, or until it is cold, and stir in the Pimm's. Pour the mixture into tall glasses filled with ice cubes and garnish each drink with an additional cinnamon stick and a strip of orange rind.

4 tea bags
3 tablespoons sugar
Two 4-inch cinnamon sticks, broken into pieces, plus additional sticks for garnish
2 cloves
Two 3-inch strips of orange zest removed with a vegetable peeler, plus strips of rind removed with a channel knife for garnish
1 cup Pimm's No. 1 Cup

Steps:

  • Put the tea bags and half the mint into a large jug, then pour over 1.2 litres boiling water from the kettle. Leave to infuse for 10 mins, then remove the bags and stir in the sugar. Once cool, remove the mint, add the orange juice, lemon juice and Pimm's, and chill thoroughly. Can be made up to a day ahead.
  • Serve over plenty of ice, with slices of orange, lemon and strawberry, and remaining mint sprigs.
