SPICED ROASTED ALMONDS
Roasted nuts are standard snacks, and almonds are a healthy food. But it is easy to eat too many. I find that if they are a little spicy or hot, delicious as they are, they are not quite as addictive.

Steps:
- Preheat the oven to 350 degrees. Toss the almonds with olive oil, salt and cayenne, and place on a baking sheet. Roast in the hot oven until they begin to crackle and smell toasty, 15 to 20 minutes. Be careful when you open the oven door because the capsicum in the cayenne is quite volatile, so avoid breathing in, and be careful of your eyes. Remove from the heat and allow to cool. Toss with the thyme.

SWEET AND SPICY ROASTED ALMONDS
Not your typical roasted almonds, these have a little kick of chili powder and the depth of more cinnamon than most recipes.

Steps:
- Preheat oven to 250 degrees F (120 degrees C). Lightly grease a 10x15-inch jelly roll pan.
- Combine egg white and vanilla in large bowl; beat until frothy. Add almonds and toss to coat. Pour almonds into a mesh strainer to drain excess liquid, 5 to 10 minutes. Return strained almonds to the bowl.
- Stir white sugar, brown sugar, cinnamon, chili powder, and salt together in a bowl. Sprinkle sugar mixture over almonds and toss to coat evenly. Spread coated nuts evenly onto prepared jelly roll pan.
- Bake, stirring every 20 minutes, until the seasoning clings to the almonds, about 1 hour. Allow to cool completely before storing in an air-tight container.

- Preheat an oven to 350 degrees F (175 degrees C). Spread the almonds onto a baking sheet, and toast until the nuts start to turn golden brown and become fragrant, about 10 minutes. Watch the nuts carefully as they bake: they burn quickly.
- Stir together the sugar, salt, and cayenne pepper in a mixing bowl; set aside.
- Stir together the water, honey, and olive oil in a large skillet over medium heat. Once the mixture begins to bubble, stir in the toasted almonds until evenly moistened. Pour the almonds into the sugar and spice mixture, and toss until evenly coated. Spread onto baking sheets in a single layer, and cool to room temperature.

TOASTED SPICE RUB ALMONDS

- Preheat oven to 350 degrees F.
- Blanch the almonds in boiling water, until the skins peel off.
- Melt the butter in a large ovenproof skillet over moderate heat and cook until it turns light brown and smells nutty. Add the almonds and salt and cook, stirring occasionally, over moderate heat until the almonds begin to color, about 5 minutes, coat and toss in the spice mix thoroughly. Transfer the skillet to the oven and bake until the almonds are medium-brown, about 15 minutes.
- Remove from the oven, taste for flavor, add more spice mix or salt, if necessary. Return to the oven for another 5 minutes. Transfer the nuts to a sheet pan; they will crisp as they cool. Store the cooled almonds in an airtight container at room temperature. (See Cook's Note)
- Toast the fennel seeds, coriander seeds, and peppercorns in a small, heavy pan over medium heat. When the fennel turns light brown, work quickly. Turn on the exhaust fan, add the red pepper flakes, and toss, toss, toss, always under the fan. Immediately turn the spice mixture out onto a plate to cool. Put in a blender with the chili powder, salt, and cinnamon and blend until the spices are evenly ground. If you have a small spice mill or a coffee grinder dedicated to grinding spices, grind only the fennel, coriander, pepper, and chili flakes. Pour into a bowl and toss with the remaining ingredients.
- Toasting freshens spices, releases their oils, and makes them more fragrant, as well as adding a new dimension of flavor. Keep the spice mix in a glass jar in a cool, dry place, or freeze.
- Taste your chili powder and, if too spicy and hot, cut back the amount. California chiles are almost sweet, not hot.

- Add the olive oil and almonds to a hot frying pan.
- Fry and toast the almonds until golden brown, shaking the pan regularly to color them evenly.
- Crumble in the chili to taste and add the sea salt.

SPICED TOASTED ALMONDS
Sometimes I think that if we could get cars to run off almonds, you wouldn't need more than a handful to go from San Francisco to L.A. Yeah, they have that much energy-twenty nuts are more than enough to get most people I know through a hunger rush-and they're nutrient dense, so the body can put every calorie to work. It's really easy to prep up a whole bunch of these; all it takes is a little olive oil, some seasoning, and a few minutes in the oven and they're ready to rock. I often tell my clients to leave little bowls of these around the house so they're constantly tempted to grab a healthy nibble.

- Preheat the oven to 350°F.
- Toss the almonds with the olive oil, maple syrup, salt, cinnamon, and ginger until evenly coated, then spread them evenly on a sheet pan. Bake for 7 to 10 minutes, until aromatic and slightly browned. You know they're done when you can smell them. The almonds will become crispy as they cool.
- While I was scuttling around the Commonweal Retreat Center's kitchen, I came up with the following mix of tasty morsels that everyone seemed to love. To 2 cups of toasted almonds, add 1 tablespoon of dark chocolate chips, 1/4 cup of dried cherries, and 1/4 cup of pumpkin seeds.
- If you're looking for a more savory flavor, swap out the cinnamon and ginger for 1/4 teaspoon each of dried rosemary, sage, and thyme.
- When in doubt, take them out! Nuts will continue to cook after they have been removed from the oven.
