- Pat chicken thighs dry with a paper towel and season with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Place chicken thighs into the hot oil and cook until brown, about 4 minutes, then turn and place onion slices on top.
- Stir together apple cider and sambal oelek; pour over chicken and onions. Reduce heat to medium-low and simmer until chicken is no longer pink in the center and the juices run clear, 10 to 15 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Transfer chicken and onion to a plate and keep warm.
- Increase heat to medium-high and bring the liquid in the skillet to a boil. Continue boiling, uncovered, until the liquid has reduced to about 3/4 cup. Pour over chicken thighs and onions and garnish with fresh chives. Serve warm.

- In a large pot over medium heat, add the apple cider. Stir in the brown sugar, allspice and nutmeg until the sugar is dissolved and bring to a low boil.
- Stick the pointy ends of the cloves into the orange so that just the buds of the cloves are visible. The entire orange should be covered with the cloves.
- Add the orange to the cider and reduce the heat to simmer. Cover and continue cooking for 20 minutes.
- Serve in warm mugs with a cinnamon stick garnish. For adults, add bourbon to the cider.

Simple spiced apple cider! I used to buy the spices already mixed at the grocery store, and they stopped carrying it this year, so I just made my own. This is great for a shower or get together and the slow cooker keeps it warm, so guests can enjoy it through the night. When it's done, it's great mixed with spiced rum and/or a slice of orange! Leftover cider is great cold too!
