CHICKEN ENCHILADA DIP

I found this dip on another site. I usually plan ahead and grill extra chicken a day or so ahead. However, the purchased grilled chicken would work just as well. Cooking time does not include preparing the chicken.

Steps:

  • Place shredded chicken in a medium bowl, and mix in cream cheese, mayonnaise, shredded cheese, green chile peppers and jalapeno pepper.
  • Transfer the chicken mixture to a medium baking dish.
  • Bake uncovered at 350 degrees for 30 minutes, or until the edges are golden brown.
  • ***NOTE***I season the chicken with my favorite spices prior to grilling.
  • Fajita seasoning or Montreal seasoning work well.
  • The purchased grilled chicken would save a step, also.
  • I have added more or less jalapeno depending on the tastes of those I will be serving it to.

Steps:

  • Heat oven to 350°F. Lightly oil 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In large bowl, combine shredded chicken, enchilada sauce, chiles, 1/2 cup of Monterey Jack cheese and 1/2 cup of the Cheddar cheese. Pour into baking dish. Top with remaining cheeses.
  • Bake about 20 minutes or until bubbly around edges. Cool 5 minutes before serving with tortilla chips.

Steps:

  • Preheat oven to 400 F.
  • In a large bowl, mix together the cream cheese, beans, corn, tomatoes, enchilada sauce, queso cheese, 1/2 cup Mexican Blend cheese, and taco seasoning.
  • Stir in the chicken.
  • Pour the mixture into a 9x9 inch casserole dish or pie dish sprayed with nonstick spray (this mixture would make enough for one casserole dish or 2 pie dishes).
  • Top with the remaining cup Mexican blend cheese and cilantro.
  • Bake for 25-30 minutes or until cheese is bubbly and melty.
  • Top with more cilantro and sour cream if desired.
  • Enjoy!

Spicy Buffalo Chicken Enchiladas image

Steps:

  • Preheat the oven to 350 degrees F. Butter a 9-by-13-inch baking dish.
  • Add the chicken and 2 1/2 cups of the Monterey Jack cheese to a large bowl and toss together. Set aside.
  • Heat the butter, enchilada sauce and hot sauce and in a small saucepan over medium heat until the butter melts. Remove from the heat. Transfer 1 cup of the sauce to the bowl with the chicken. Toss to fully coat.
  • Ladle 1/2 cup of the sauce into the bottom of the prepared baking dish. Spread a heaping 1/2 cup of the chicken mixture evenly onto a tortilla, then roll it up. If you'd like, trim the round ends of the tortilla that are unfilled and reserve for another use. Cut the rolled tortilla into 6 pinwheels. Place each pinwheel cut-side down in the baking dish. Repeat with the remaining tortillas and chicken mixture. Pour the remaining sauce over the tortillas and sprinkle the remaining Monterey Jack cheese on top.
  • Bake until the cheese is melted and bubbling, 15 to 20 minutes.
  • Meanwhile, toss the lettuce with the ranch dressing in a large bowl.
  • Sprinkle the blue cheese crumbles on top of the enchiladas. Serve immediately with the salad.
  • Combine the mayonnaise, buttermilk, chives, parsley, garlic powder, 1/4 teaspoon salt and 1/4 teaspoon pepper in a medium bowl. Refrigerate until ready to serve.

I came up with this dip when I was in the mood for Buffalo chicken dip, but didn't have the necessary ingredients. It is a creamy cheesy dip with a nice bit of back-end heat. I don't usually measure when I cook, so feel free to adjust any measurements to fit your taste. We ate this with sliced french bread, pretzels, and chips.

Steps:

  • Heat olive oil in a saucepan over medium heat; cook and stir sweet onion and celery in hot oil until translucent, 5 to 7 minutes. Add chicken, granulated garlic, and seasoned salt; continue cooking until chicken is warmed, about 3 minutes.
  • Stir cream cheese, chicken broth, and processed cheese food into the chicken mixture. Reduce heat to low, place a cover on the saucepan, and cook until the cheeses are melted, about 5 minutes.
